Walnut Torte
1 cup plus 6 tablespoons walnuts
4 large eggs, separated
1/2 cup sugar
Preheat oven to 350 degrees. Grind walnuts in food processor until finely ground but not pasty.
Butter bottom (not sides) of a 9 inch springform pan. Using an electric mixer, beat egg yolks in a large bowl until fluffy, about four minutes. Gradually add 1/2 cup sugar, beating until well blended. Stir ground walnuts into yolk mixture.
Using clean, dry beaters, beat egg whites in a another bowl until stiff but not dry. Fold whites into yolk/walnut mixture in two additions. Transfer batter into prepared pan
Bake until cake tester inserted in center comes out clean, about 40 minutes.
Cake will fall in the center as it cools.
Serve with a dusting of powdered sugar or whipped cream.
I find this really captures the essence of walnut flavor in a sweet snacking cake!

125 g raw shelled walnuts
3 cup cooking oil for frying
1 tablespoon water
1 cup icing sugar
1) Heat the wok then add oil, deep-fry the walnuts for about 1 minute, remove and drain. Remove the oil from the wok and clean it.
2) Reheat the wok then place the walnuts and 1 tablespoon of water in the wok, stir lightly to moisten the walnuts. Add the icing sugar, stir to mix so that the nuts are lightly coated. Remove the walnuts and place them on a plate to cool. When cool, the sugar will become white and crispy.
(This recipe can apply to cashews, almonds as well)
I took a quick peek at the ';find recipe'; on my site cause I was wondering how many recipes with ';walnut'; I have on my site. I one of my favorite nuts. Almost walnut-time: my mother has a huge walnut tree in her garden so within a month or so I'll get tons :)

Love your name. Is that your kitty's name? Almost afraid to ask how it got it...
Walnuts. A truly noble nut.
I like to take walnuts, pecans, unsalted cashews, lightly salted peanuts and unsalted almonds and combine them with pieces of dried apricots, raisins, currants (when I can find them), dried cranberries and raw, unsalted sunflower seeds.
Mix them all together in a large zip-loc bag and you have a great trail-mix type snack that is healthy and delicious. I used to make big bags of it to take in to my co-workers and it was always a hit. You can also add bits of dark chocolate for a special zip.
Great for curbing the mid-morning ';munchie attack'; until lunchtime rolls around.
