    A very simple snack idea! Fill the center of the celery stick with peanut butter. Place a few raisins on top to be your ants. Eat and enjoy!

    Cut apples into wedges. Smear peanut butter on one side of 2 wedges. Stick a few marshmallows on the peanut butter on one of the apple wedges and top with the other apple wedge - peanut butter side down. When you look at this it looks like a smile (the red part of the apple are the lips and the marshmallows are the teeth!)

    Decide how many colors you want to use and gather that many small cups. Put about 1/4 cup of milk in each cup. Using the food coloring, add a different color to each cup. Add the food coloring until you get a bright color. Now, use the paint brush and paint a picture on a piece of bread. Make sure that bread doesn't get too wet. When your picture is done, toast the bread. Now you have a master piece to eat! If you want top the toast with a bit of butter

    Preparation:





    Prepare small bowls of sesame seeds, poppy seeds and grated cheese. use two biscuits and form four small dough balls. Dip the dough balls into the melted butter and then roll them in seeds or cheese. Press the balls together on a cookie sheet to form a caterpillar shape.


    Bake the biscuits according to the directions on the package. When the caterpillar biscuits are done, you can poke 2 pretzel sticks into the head of the biscuit caterpillar for antennae. You can use the raisins for eyes.

    Open the refridgerator biscuits and seperate. Taking one biscuit at a time, flatten them as much as possible on an ungreased cookie sheet (leaving the cookie sheet ungreased allows the biscuits to stick a little and stay flatter!) Once the biscuits are flattened, you can construct your mini pizzas using whatever ingredients you want. Once your pizzas are ';built';, put them in the oven and cook until the cheese is melted and bubbly!

    Five Spice Popcorn


    2 1/2 quarts popped popcorn


    1 cup Chow Mein noodles, optional


    1/2 cup peanuts


    1/3 cup peanut oil


    2 tablespoons soy sauce


    1 teaspoon five-spice powder


    1/2 teaspoon garlic powder


    1/2 teaspoon sesame salt or salt


    1/2 teaspoon ground ginger


    1/4 teaspoon cayenne pepper


    1/8 teaspoon sugar





    Keep popcorn, noodles and peanuts warm. Combine remaining ingredients and mix thoroughly. Slowly pour over popcorn mixture, tossing to blend. Pour into a large roasting pan. Heat in a 300-degree Fahrenheit oven for 5-10 minutes, stirring once.





    Yield: 2 1/2 quarts.

    3 tablespoons margarine or butter


    1 (10 oz.) package regular marshmallows

    Directions


    1. Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.





    2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.





    3. Using buttered spatula or waxed paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cut into 2-inch squares when cool. Best if served the same day.









    Bacon Stuffed Cherry Tomatoes





    1 pint cherry tomatoes


    1/2 cup mayonnaise


    1/2 cup parmesan cheese


    1 bunch green onions


    1 2.5 oz. package Real Bacon Pieces





    Cut top off each tomato. Using a melon baller, carefully scoop out seeds and pulp. Place each tomato upside down on paper towel to drain. Combine rest of ingredients in small bowl. Stuff each tomato with the bacon mixture. Chill in fridge for at least 2 hours to blend flavors. Serve cold.

    Fat-Free Raspberry Brownies





    1 1/2 cups sugar (can use Splenda)


    3/4 cup unsweetened cocoa powder


    1 cup fat-free egg substitutes


    1 10oz. jar sugar-free raspberry preserves


    1 teaspoon vanilla


    1/2 teaspoon salt


    1/2 teaspoon baking soda


    1/4 teaspoon almond extract


    1 cup flour (can use wheat)





    Preheat oven to 325 degrees F. Prepare 9x13 inch baking pan with nonstick cooking spray and set aside.





    With an electric mixer, combine sugar and cocoa. Gradually pour in egg substitutes and raspberry preserves, beating on low speed until sugar is no longer grainy. Add vanilla, salt and almond extract and beat briefly to mix. Combine flour and baking soda and stir in with a rubber spatula. Pour into prepared pan.





    Bake for 30-35 minutes. Brownies should be slightly underbaked but not runny in the center. Allow to cool and cut into 2x2 inch squares.

    Yogurt Crunch


    Ingredients:





    * 6 cups vanilla yogurt


    * 4 firm granola bars, any flavor: peanut butter, cinnamon, oats-n-honey


    * 1/2 cup chopped nuts: walnuts, pecans or hazelnuts, toasted


    1/2 pint strawberries, hulled and sliced





    Method





    Pour yogurt into a bowl. Add granola bars to a plastic food storage bag and crush. Add to yogurt along with nuts. Stir to combine all ingredients and transfer to cups. Top with strawberries and serve.

    1 c. chunky peanut butter


    2/3 c. honey


    1/2 c. powdered milk


    16 graham crackers, crushed fine or 1 1/4 cups crumbs





    Combine peanut butter, honey, and dry milk, stir until blended well. Add cracker crumbs, stir well. Grease hands, roll mixture into ping-pong size balls or smaller if desired. Then roll in either shredded coconut or wheat germ. Best if kept refrigerated.

    1 egg


    1/2 c. vegetable oil


    3/4 c. milk


    2 c. wheat flour


    1/3 c. sugar


    3 tsp. baking powder

    Heat oven to 400 degrees. Use muffin cups or grease bottoms of muffin pans. Beat egg. Stir in oil, milk and fruit. Stir in remaining ingredients all at once, just until moistened. Batter will be lumpy. Fill muffin cups 3/4 full. Bake until golden brown, about 20 minutes.

    dry oatmeal,honey/peanut butter/corn syrup,brown sugar, raisins (other dried fruit bits), chocolate chips, coconut, vanilla....etc.





    mix, pour into greased pan, bake at 350 degrees 15-20 mins, cut into bars once cooled. mmm.
    Get some cheese and wrap it up in ham - Cream cheese is usually best.





    or Pizza sticks - get some french baugettes, slice them in half (horizontally), spread some tomato paste and add sprinkle some cheese on top (Mozzarella is better, dont use some stupid expensive cheese like Brie). Put them under a grill or in an oven till they are cooked.

    Ham Salad Rolls


    * 2 cups diced ham


    * 1 rib celery, cut up


    * 1 onion slice, about 1/4-inch thick


    * 6 to 8 tablespoons mayonnaise

    PREPARATION:


    In a food processor, combine the ham, celery, onion, and pickles or pickle relish. Pulse until minced; transfer to a bowl.     1 stick butter (or 陆 cup soft unmelted butter)


    4 Tbsp. cocoa

    1 Tbsp. peanut butter








    1) Mix sugar, milk, butter, %26amp; cocoa.


    2) Boil 4 min. (Start timing when this gets to a HARD boil.)


    3) Pour over oatmeal.


    4) Stir in peanut butter.


    5) Spoon out onto cookie sheet or foil with regular teaspoon.


    6) Flatten; Let cool.

    CHEX MIX PUPPY CHOW


    9 cup Chex


    1 cup chocolate chips


    1/2 cup peanut butter


    1/4 cup butter


    1/4 teaspoon vanilla


    1 1/2 cup powdered sugar


    Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter. Remove from heat and stir in vanilla.


    Pour over Chex cereal, put into a large plastic bag with powdered sugar and shake well to coat.





    Spread mixture evenly on wax paper and allow to cool.I need some good snack recipes.?
    Smoothies - just chuck some fruit, honey, yogurt or milk into a bowl and blitz until basically smooth then sweeten with Sugar to taste.


    Croque Monsieur - put some cheese and ham between buttered on both sides bread. Fry on a pan until golden brown. Eat. For a Croque Madame put a fried egg on top.


    Egg - fried,scramled, boiled, poached, they all taste good.

    3/4 c. nonfat dry milk


    1/2 c. nuts (optional)

    Graham cracker crumbs





    Mix all ingredients except graham crackers. Roll into mouth-sized balls and roll in graham cracker crumbs. Serve immediately or can be chilled. These are great!!!

    very healty and yummy snack:





    Take a cucumber, wash then cut into rings of about half an inch or 5cm thick. Clad it with kitchen paper to get some of the water out.





    You gonna use the cucumer rings as a ';biscuit'; for your topping.





    I normally put some plain yogurt or low fat mayo with shirmps, tuna or chicken


    Or sweet chil;lie sauce with smoked oysters.





    Decorate with thinly sliced carrot stick, red pepper sticks, green pepper sticks, whatever just something to give it a little colour.





    Put on a serving plate, put some fresh ground pepper over your cucumber canopes as i call them, and wedges of lemon on the side.

    3oz butter


    salt pepper 2 or 3 oz tasty cheese





    Finger mix all together


    Make into a dough add a little milk if necessary


    Roll out 1/4 inch thick and cut into long strips .


    Put onto baking sheet and you can brush each with milk and sprinkle on a bit more cheese .Bake in hot oven on top shelf for 10 mins or until golden on top.They should be crispy but not hard .

    Dates Wrapped in Bacon





    2 boxes of pitted dates


    2 packages of bacon





    Cut bacon package in half, wrap a date in a bacon half and arrange on a baking sheet. Bake at 350 for about 30 minutes, halfway thru baking turn them around so they bake completely. Drain, let them cool and arrange on a pretty dish with toothpicks.

    Marinated Mushrooms


    1 pound fresh mushrooms, sliced


    3/4 cup olive oil


    3 tablespoons tarragon vinegar


    陆 teaspoon salt


    Dash pepper


    2 teaspoons minced parsley


    陆 teaspoon dried tarragon


    Mix all ingredients together. Let stand at room temperature, 6 hours if possible, to mellow flavors.

    Pineapple Cheese Spread





    This makes 5 cups.





    2 8 oz. cream cheese


    1 8 陆 oz. can crushed pineapple, drained


    1 c. chopped pecans


    陆 c. chopped green bell pepper


    2 T. chopped green onion


    1 t. Lawrey's Seasoned Salt


    Soften cream cheese and mix with pineapple, nuts, green pepper and onions. Blend in salt and mix well. Pack into a crock and refrigerate to set or roll into a ball covered with crushed pecans. Serve with crackers

    Sugared Spiced Nuts





    1 large egg white


    1 teaspoon water


    4 cups mixed salted roasted nuts (about 1 1/4 lb.)


    1 cup sugar


    1 1/2 tablespoons cinnamon or pumpkin pie spice





    Preheat oven to 250F.





    Whisk together egg white and water in a large bowl until frothy and stir in nuts. Stir together sugar and cinnamon and stir into nuts, coating well. Spread nuts in a lightly buttered large shallow pan and bake in middle of oven until dry, about 50 minutes. Cool and break into bite-size chunks.





    Cooks' note:


    Nuts keep in an airtight container at room temperature 5 days.

    2 pkgs. (one 8 ounces, and one 3 ounces) cream cheese, softened


    2 Tablespoons mayonnaise


    1 pkg (.4 ounce) ranch salad dressing mix


    3 dozen cherry tomatoes





    In a mixing bowl, blend cream cheese, mayonnaise and salad dressing mix until smooth. slice a thin slice off tops of tomatoes and carefully remove insides; invert on paper towel to drain. Fill with cream cheese mixture.

    1 cup mayonnaise


    1 1/2 cup sharp cheddar cheese


    陆 cup chopped pecans


    2 green onions, chopped





    Mix in ball and refrigerate over night. Pour 5 oz. strawberry preserves over ball just before serving. Serve with a butter cracker such as Ritz.

    1 can whole water chestnuts


    1 pound bacon


    1/4 cup mayonnaise


    1/4 cup chili sauce


    1/2 cup brown sugar





    Cut each bacon strip into thirds, wrap chestnut and secure with toothpick. Mix mayonnaise, chili sauce and brown sugar and pour over bacon rollups. Bake at 350F for 45 minutes. Serves 6

    take a shrimp, add a slice of jalopeno, wrap with bacon and secure with a toothpick.

    ezy simple short cakes. its my resipy so go ahead and use it or change it a bit. just go buy short cake in pakeging and its about 2$ for a pakge of 6. its just soft cake with nothing andhas a crater for u to fill it. it a mousse cream so u need to fridge it or some thing but dont put it in the frezzer itll mess up the cream. u can use store bout whip cream or whip ur own cream if u want it not at sweet.( u make ur own cream by buying heavy whiping cream in those milke cartons and use a blender and put on whip or low, whip it until have a slow drip so when u lift up the the blender it will drip slowly thn add a little vinilla, one tea spoon of orange juice with a zest of the peel, thn sugar use the fine kind is better. whip it until semi thick to thick its bad. then use what kind of berrys u want(i used black berrys %26gt;w%26lt; thy were on sale haha) use easy to smash up kinds of berrys thn mix with the cream and smush!


    put it in the short cake and spread it out even it. put strawberrys on top, any kind of fruit works too but strawberrys looks the best. thats it change it a bit to your price,time, and quantiy rate!

    8 oz pkg cream cheese,softened


    1-2 cup sour cream


    1-4 cup mayonnaise


    2 cans shrimp ( if like)


    1 cup seafood,cocktail sauce


    1 green pepper chopped


    3 green onions,chopped


    1 tomato,diced


    shredded mozzarella cheese





    mix first 3 ingredients together. spread over 12 inch pan.


    scatter shrimp over bottom layer. layer remaining ingredients.


    chill in fridge.
    Core and slice an apple. Heat 1 Tblsp. butter in a small fry pan. Toss your apple in, stir, shake on a bit of cinnamon, sugar if you dare and cook until softened some.


    Mix yoghurt with fresh fruit.


    Grab a handful of nuts.


    Slice some cheese and toast a bagel.


    Mix sour cream with a packet of dried spring vegetable soup and have some veggies with it.


    Mix 1 package cream cheese, 1/2 tsp. hot sauce, 1/4C. shredded cheddar, 2 tsps. minced garlic OR 1 tsp. garlic powder, 1/2 tsp. worchestershire sauce. Beat until smooth. Have crackers, pita crisps or veggies with it.


    Top whole wheat crackers with a bit of cheese and pop in hot oven until the cheese melts.


    Spread trimmed and washed celery stalks with peanut butter. Add raisins if you like.


    Cottage cheese popped in the blender or food processor with a bit of fresh basil makes a good dip.


    If you like shrimp, unwrap a package of cream cheese and put on a plate or in a bowl. Put 1 can of the tiny shrimp, drained, over it. Pour 1/2 C. cocktail sauce over it. Serve with crackers.


    Spread tortillas with cream cheese or mayo or yoghurt. Layer some fresh greens, like spinach or romaine leaves, then some thin sliced meat, cheese, other veggies you like. Roll up, slice and serve. Refrigerate for a few minutes, wrapped after rolling in plastic wrap, if they aren't holding together too well for slicing.


    If you have angel food cake, slice and toast. It's great and a good way to use up any leftover before it goes stale.
    get a tortilla, smear it with peanut butter, slice a banana and put it on the tortilla, sprinkle with chocolate chips, fold up and heat on a pan.

    (This works great! Good for when all your family is together. The best part is that no one has to wait for their special omelet).





    Have each person write their name on a Quart-size Ziploc freezer bag with permanent marker.


    Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.


    Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, salsa, etc.


    Each person adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.





    Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.


    Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.


    Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

















    Imagine having these ready the night before, and putting the bag in boiling water while you get ready for work. And in 13 minutes, you got a nice omelette for a quick breakfast!

    Fruits just by themselves will be lowest in fat; however, everyone gets bored with the same things over and over. I make a power shake that is so tasty, it is energizing, healthy and filling. @ Bananas, 1 cup lowfat vanilla yogurt, 1 Tbls of peanut butter, ice, blend in blender till smooth/crunchy. Sprinkle some Grape Nuts cereal on top, yummy!

    2 bananas and a 12 oz glass of whole milk. Skim or 2% will not work. It will hold you until the next meal. I use it for road food on long trips to substitute for one meal on a trip. You don't have to cook anything and it's pre-packaged.

    When I want to snack semi-healthy I love to put together a little bowl of seedless grapes and cubes or slices of cheese. I love Swiss, but cheddar is really good, too! Something kind of sharp to go with the sweet grapes.

    Mix together the following in a medium bowl. Divide into smaller portions and store in small ziplock baggies.

    Hungry kids make lousy travel companions.





    They whine, play tug-of-war with the Game Boy and beg for Happy Meals in a stretch of road so desolate even rattlesnakes get lonely.





    This summer, avoid car-trip hunger tantrums with simple but appetizing travel foods. A little pre-highway prep goes a long way toward car-trip harmony and economy. A well-stocked cooler can help defray the sky-high cost of gasoline by avoiding expensive stops at restaurants or convenience markets. advertisement














    To help, we asked Laura Slama, caterer, granola manufacturer, cooking instructor and, most important, mother of two, to help by creating foods to keep bellies full and break the monotony of driving to the beach or mountains. Her tips are great for kids, but also work well for adults, who often need one hand to drive and the other to eat. Her advice:





    Do not make everything healthful. ';I think feeding kids a healthy diet is very important, and I preach good nutrition all the time, but this is a vacation road trip. Let the fun begin with the food,'; said Slama, who owns Celebrated Cuisine in Tempe and who recently turned her homemade granola into a commercial success. Laura's Gourmet Granola Vanilla Almond Crunch is sold at AJ's Purveyors of Fine Foods, the Counter in Scottsdale and other specialty food stores.





    Keep the food simple. This makes it easier to prepare and to eat in the crowded confines of the family car. Pack fruit that can be eaten without peeling or slicing.





    Stay away from anything greasy, messy or hot. For trips five hours or longer, pack food for at least one meal, as well as the munchies for ';are we there yet?'; boredom eating.





    Slama includes her two daughters, Sam, 15, and Maddie, 11, in the planning and preparation of road trip food because kids are more likely to eat food they helped make. To the Slamas, Maddie's Travel S'mores are as essential to vacation as sunny beach days.





    So are the parfaits, layers of fresh berries, yogurt and granola in plastic cups. These make a great breakfast - or afternoon treat - on the road.





    Dehydrated kids can be cranky, so do not forget drinks.





    Opt for minisize plastic bottles of water, chocolate milk and lemonade. This prevents kids from drinking half and attempting to balance the bottle between their legs.

    2 (14 ounce) packages red and green candy-coated chocolate


    1 (14 ounce) package chocolate covered peanuts


    1 (7 ounce) jar wheat nuts





    Mix together the peanuts, red and green candy-coated chocolate


    pieces, red and green candy-coated chocolate covered peanuts,


    chocolate covered peanuts and wheat germ nut snacks.


    Serve in a large bowl or place in decorative glass jars and give as


    gifts.




















    Caramel Corn %26amp; Craisins庐 Snack Mix





    INGREDIENTS:





    2 quarts popped popcorn, unpopped kernels removed


    3/4 cups granulated sugar


    1/2 cup firmly packed brown sugar


    1/3 cup light corn syrup


    1/3 cup water


    3 tablespoons butter


    1/2 teaspoon salt


    1/2 teaspoon baking soda


    1/2 teaspoon vanilla


    1 6-ounce Ocean Spray庐 Craisins庐 Original Sweetened Dried Cranberries


    1 cup semisweet chocolate chunks or chips


    1 cup honey roasted peanuts


    DIRECTIONS:





    Place popped corn in large bowl; set aside.





    Combine granulated sugar, brown sugar, corn syrup and water in medium saucepan. Bring to a boil over medium heat, stirring occasionally. Brush sides of pan with pastry brush dipped in water to remove any sugar crystals. Boil until mixture reaches 300掳 F (hard crack stage), about 6 to 8 minutes.





    Remove from heat. Carefully stir in butter, salt, baking soda and vanilla. Pour syrup over popcorn; toss to coat. Spread on waxed paper to cool. Break up into chunks. Cool completely.

    1 cup semisweet chocolate chunks or chips


    1 cup honey roasted peanuts


    DIRECTIONS:





    Place popped corn in large bowl; set aside.





    Combine granulated sugar, brown sugar, corn syrup and water in medium saucepan. Bring to a boil over medium heat, stirring occasionally. Brush sides of pan with pastry brush dipped in water to remove any sugar crystals. Boil until mixture reaches 300掳 F (hard crack stage), about 6 to 8 minutes.





    Remove from heat. Carefully stir in butter, salt, baking soda and vanilla. Pour syrup over popcorn; toss to coat. Spread on waxed paper to cool. Break up into chunks. Cool completely.

    PAD THAI


    Ingredients:


    12 oz dried flat rice noodles


    1 package wheat gluten “chicken”, sliced into small pieces OR 5-6 squares deep-fried tofu, cut into small piec


    3 sliced shallots


    1-2 fresh green chillies, depending on desired spiciness (for mild noodles, remove seeds)


    2 eggs (omit if vegan)


    1 cup snow peas


    1 cup bean sprouts


    ¼ cup ground peanuts (unsalted)


    3 spring onions, finely sliced


    1 cup fresh coriander, roughly chopped


    3 Tbsp peanut or coconut oil


    SAUCE:


    4 Tbsp light soy sauce


    ½ tsp. dark soy sauce


    2 Tbsp lime juice


    1 Tbsp. sugar


    ½ Tbsp. tamarind paste mixed with ½ cup water


    3 Tbsp tomato ketchup


    Preparation:

    Soak rice noodles in hot water until soft (8-10 minutes). Drain and toss with 1 Tbsp. oil to keep from sticking (or rinse with cold water).


    Mix all sauce ingredients together in a cup. Set aside.


    Place remaining oil in wok. Over medium-high heat, stir-fry shallots and chillies until fragrant (about 1 minute).


    Add wheat gluten or tofu and stir fry (1 minute).


    Add snow peas and stir-fry another minute until bright green.


    If using eggs, clear a space in the center of the wok. Crack eggs into it and stir-fry until cooked.


    Add noodles and sauce, then stir-fry, lifting and turning the noodles to combine all ingredients (1-2 minutes).


    Taste for saltiness. If not salty enough, add up to 2 Tbsp. fish or soy sauce.


    Take off the heat and add bean sprouts, mixing well to combine (note that bean sprouts should retain some of their crunchiness).


    To serve, place noodles on a platter. Sprinkle with spring onions, ground nuts, and coriander. For those who like it extra hot, serve with a bottle of “sambal” (red chilli sauce).

    Kung Pao Tofu








    1 block tofu, firm


    1 tablespoon peanut or olive oil


    1 cup hoisin sauce


    1/2 cup soy sauce


    1 tablespoon Sambal Oelek (chili and garlic sauce)


    1 tablespoon Spicy Bean Paste (Korean hot sauce)


    1/2 cup red wine vinegar


    1/2 cup sugar (optional)


    1/2 cup carrot, small diced


    1/2 cup onion, small diced


    1/2 cup red bell pepper, small diced


    1/2 cup zucchini, small diced


    1 tablespoon peanut or olive oil


    1/4 cup macadamia nuts or peanuts


    Place the water packed tofu in the freezer overnight. Using tofu that has been frozen first will give this dish a meatier feel. Freezing makes the texture of tofu chewier, which resembles chicken. Thaw the tofu by leaving it out all day or in the microwave for a few minutes. Once thawed, squeeze the tofu between your hands over a bowl to catch all the water that will come out. It will feel like squeezing a sponge dry. The more water you get out, the more the tofu will absorb the flavors of the sauce. Slice the tofu in to bite-sized cubes and fry in the peanut oil until golden brown. Set aside.





    Next, make the Kung Pao sauce. Combine all the sauce ingredients in a mixing bowl and mix well, then set aside. Adjust the sauce to your taste by adding more hot sauce if you want the sauce to be hotter, and less sugar to take away some sweetness.





    Cut all the vegetables into same size pieces so that they will cook evenly. You can use all your favorite vegetables, these are just a suggestion. In a sauté pan heat the peanut oil and sauté the vegetables. Just be sure to add the thicker ones, like carrots, first and let cook for two minutes. Then the onion and bell peppers for another two minutes. Add delicate vegetables like zucchini last and only cook briefly or they will get mushy and lose vitamins. Add the golden tofu cubes and mix gently. Now add the sauce, a little at a time, until you get the desired coating. Let the mixture simmer for a few minutes to reduce the sauce and thicken it. For the final touch, sprinkle with macadamia nuts for a truly local flair, or peanuts. Serve over jasmine rice and enjoy!

    Last year I made twenty different kinds of Christmas cookies to give as gifts. You should be able to find some really good stuff on these sites. They're a few of my favorites.
    1 cup butter, softened


    1 (8 ounce) package cream cheese


    1 cup white sugar


    1/2 teaspoon vanilla extract


    2 1/2 cups all-purpose flour


    1/2 teaspoon salt


    1/2 cup chopped pecans


    1/2 cup green sugar crystals


    1/2 cup red sugar crystals


    1 cup pecan halves





    DIRECTIONS


    Cream together the butter and cream cheese. Add sugar and vanilla; beat until light and fluffy.


    Combine the flour and salt; gradually add to creamed mixture, beating until well blended. Stir in chopped pecans. Cover bowl with plastic wrap and refrigerate for 15 minutes.


    On four sheets of aluminum foil, shape dough into four 6 inch rolls, 1 1/2 inches in diameter. Wrap each roll tightly in foil and refrigerate over night.


    Preheat oven to 325 degrees F (165 degrees C). Line cookie sheets with foil. Remove rolls of dough from refrigerator one at a time. Coat each roll with red or green sugar crystals; cut dough into 1/4 inch slices.


    Place on prepared cookie sheets; top each cookie with a pecan half. Bake for 15 to 18 minutes or until bottom of cookie is lightly browned when lifted.

    Ok so my brother plays for his district (football) and I like baking and after a game our team puts food on for the teams. Last week i made them chocolate chip cookies with the simple recipe of flour,marg,sugar and an egg! (+ chocolate chips)

    1 cup SR Flour


    1 cup coconut


    1/2 cup sugar


    3/4 cup milk





    Mix all ingredients and place in loaf tin. Cook in 180 moderate oven 35mins.

    3/4 cup sugar


    2 med eggs (room temp)


    2 8 oz cream cheese (room temp)


    1 tsp vanilla


    1 can cherry pie filling


    1 box vanilla wafers


    foil cup cake cups





    If cream cheese is not soft enough, you may microwave until smooth. Combine cream cheese, sugar, eggs and vanilla. pour into foil cupcake cups (3/4 full). Bake at 350 degrees for 10 minutes. Do not over cook. Let cool. Add cherry pie filling to top. Refrigerate.





    Makes 16-18 cupcakes so you will need to double the recipe.

    2 sticks butter (melted)


    1 cup sugar


    1 cup brown sugar


    2 eggs


    2 cups self-rising flour


    1 12 oz bag chocolate chips


    OPTIONAL: may add some peanut butter chips





    Combine all ingredients. Spray 9X13 pan with cooking spray. Pour into pan and cook at 350 degrees for 20 minutes (depending on oven may take more time). Cook until light brown. Do not over cook. Let cool. Cut into squares.

    PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.





    SLICE AND BAKE COOKIE VARIATION:


    PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in waxed paper. Refrigerate for 30 minutes.* Preheat oven to 375掳 F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies..





    FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes

    55 min 30 min prep


    Change to: cupcakes US Metric


    1 1/2 cups self-rising flour


    1 1/4 cups all-purpose flour


    1 cup unsalted butter, softened


    2 cups sugar


    4 large eggs, at room temperature


    1 cup milk


    1 teaspoon vanilla extract











    1. Line 24 muffin tins with cupcake papers.


    2. In a small bowl, add the flours; stir to combine; set aside.


    3. In a large mixing bowl, cream the butter using an electric mixer on medium speed until smooth.


    4. Add the sugar gradually and beat for 3 minutes or until fluffy.


    5. Add the eggs, one at a time, beating well after each addition.


    6. Add the dry ingredients in three parts, alternating with the milk and vanilla.


    7. With each addition, beat until the ingredients are incorporated but do not overmix.


    8. Spoon the batter into the cupcake liners, filling about 3/4 full.


    9. Bake in a 350掳 oven for 20-25 minutes.


    10. Cool the cupcakes in the tin for 15 minutes.


    11. Remove cakes from the tins and cool on a wire rack before icing.


    12. Ice with tinted Vanilla Buttercream.

    ROASTED VEGETABLES








    6 cups 1-inch chunks small red potatoes and/or other vegetables (Parsnips, carrots, and squash work especially well)

    Salt and pepper to taste





    Preheat oven to 425掳F.

    2 zucchini, cut into 2'; chunks


    2 yellow squash, cut into 2'; chunks


    8 ounces fresh mushrooms, cleaned


    2 red and green bell peppers, cut into 2'; chunks


    2 medium red onions, cut into wedges


    2 ears sweet corn, cut into 2'; chunks


    16 whole cherry tomatoes





    toss vegetables in olive oil(or drizzle with)


    Wash vegetables except mushrooms. Brush mushrooms clean. Prepare vegetables according to recipe. Cook corn in boiling water for about 10 minutes. Toss vegetables in olive oil. Thread vegetables onto skewers. Place on grill over medium-hot heat. Baste occasionally with teriyaki sauce. Grill 20 minutes or until tender.


    Serving Size: 8








    VEGETABLE KABOBS





    1 sm. eggplant, unpeeled, cut into 2 inch cubes


    3 med. zucchini, 1 inch slices


    1 lg. onion, cut into wedges


    Herb marinade


    2 lg. carrots, 1/2 inch slices


    12 sm. potatoes


    2 sm. bell peppers, 1 inch squares


    16 lg. whole mushrooms


    2 head broccoli





    Cook eggplant in boiling water for 3 minutes, carrots for 8 minutes, and unpeeled potatoes for 20 minutes (cut into halves).


    Place vegetables in baggie with marinade sauce for 2 hour or overnight. Drain, reserving liquid to baste vegetables while stewing for 15-20 minutes over low heat, until tender. Salt lightly
    HOME COOKED VEGETABLES





    4 c. water


    4 oz. sliced onion


    2 ribs celery with leaves, cut in 1 inch pieces


    4 oz. carrots


    3 sprigs parsley


    2 packets chicken broth or golden seasoning and broth mix, or 2 chicken


    bouillon cubes





    Combine chicken broth mix, onion, celery, parsley and carrots in saucepan. Bring to boil, reduce heat, simmer 30 minutes. Yield: 2 servings.

    1 container cashews

    Another mix that I make at Thanksgiving





    1 package Bugles


    1 package tiny twist pretzels


    1 package dried cranberries


    1 bag candy corn


    1 jar dried peanuts


    1 bag plain M%26amp;Ms





    Open packages. Dump into a bowl. Mix to distribute indgredients. Serve.
    2 cups POST ALPHA-BITS Whole Grain Oat with Corn and Wheat Cereal


    2 cups unsalted popped popcorn


    1 cup small pretzel twists


    3/4 cup raisins (chopped dates)


    1/4 cup PLANTERS Salted Peanuts





    MIX all ingredients in large bowl.


    STORE in tightly covered container at room temperature.





    You can also substitute different (healthier) cereals and nuts. I often make it with pecans or almonds. If you use the dates instead of the raisins it makes it a little sweeter but without adding sugar. Hope you like it

    PREHEAT oven to 300掳F. Beat egg white and sugar in large bowl with wire whisk until foamy. Stir in orange and lemon peels, cinnamon and cloves. Add cereal and nut mix; toss to evenly coat.


    SPREAD evenly into lightly greased 15x10x1-inch baking pan.


    BAKE 20 to 25 min. or until toasted and dry, stirring occasionally. Cool completely. Store in tightly covered container at room temperature.

    Mix sour cream, and salsa, and shredded cheddar cheese. Spread a little on a tortilla. Roll it up, and then slic it about a 1/4 inch thick. Then, put it in a a tostitoes scoop chip, and shred more cheese over them. Put them in the over for 5 min at 300, and let them melt. Eat with salsa.......mmmmmm

    mix tuna with a little mayonaise and mustard and then you can eat it along with any salty cracker
    Oyster cracker Snack (these are irresistible!)





    1 cup vegetable oil, 1 envelope ranch dressing mix, 1 T garlic powder, 2 T dill weed.


    Mix well %26amp; pour over 2- 12 or 16 oz bags of oyster crackers. Stir well, until all crackers are coated.


    Best if you wait an hour before eating.





    I once bought Fiesta Ranch by accident, and used it with just the oil, and it turned out nice and spicy. A HAPPY accident!

    This is a great recipe but it is sweet. The reason being is the fruits that are used!

    Oven-toasted slices of French bread topped with diced tomatoes, chopped olives, balsamic vinegar, and a little bit of oil. Season to taste with salt, pepper, and herbes de provence.
    I found that if you take so heathy jucie that taste like limon lime and put a little sugar in it. a fat free candy cane and freeze it it tase like a sprite flavrted snow cone its real good...
