Any FILLING vegan meal and snack recommendations? (recipes welcomed)?

I've been a lacto-ovo veggie for over 10 years and in recent times have shifted towards a vegan diet. My very fast metabolism necessitates that I either eat either frequently or take in a lot of calories to get full. I've noticed that I tend to get hungry within a couple hours after ingesting vegan meals I prepare for myself, which is somewhat of a nuisance. Any recommendations for foods that can keep my energy levels up for a longer period of time are greatly appreciated. Sub-question: What makes a meal filling- is it fats, protein, general caloric content? Thanks!Any FILLING vegan meal and snack recommendations? (recipes welcomed)?

Thanks to all of you for taking the time to answer with some great suggestions. I made a tasty wrap, which seemed to hold off my appetite for a little while. Clif-type bars make an excellent quick snack, and I now have plenty more cooking to do... Report Abuse

Protein takes the longest to digest so make sure you include some protein with your veggies. Chilli is good and easy to make, I eat my chili with freshly made sour dough bread that I bake myself.





Also consider Clif bars for a snack to have around if you get hungry and are not able to get a full vegan meal. They are not snacks but meal replacements - that doesn't mean you can't have one as a snack though!
Red beans and rice with a heaping slab of cajun tofu will make you full. Don't forget a 40 oz Heineken to go along with it.
Protein takes a long time to digest making it very filling im sure you know of protein rich foods other than meats since your a vegan.

SIMPLE SOLUTION: Here is one of her delicious creamy soups made without dairy, but sure to satisfy. Leeks give lots of iron-rich mineral nourishment, while garlic and onions add their immune-boosting and heart-healthy benefits. Paired with a crisp salad, Creamy Potato-Leek Soup makes a perfect cozy Fall supper.


INGREDIENTS





1 tablespoon extra-virgin olive oil


2 leeks, white and light green parts washed and sliced into 1/4-inch slices


2 cups chopped yellow onion


1/2 teaspoon sea salt


3 cloves garlic, minced


2 large Yukon Gold potatoes (about 1 pound), peeled and cubed into 1/2-inch cubes


4 cups vegetable stock


2-3 teaspoons fresh rosemary leaves





1. Heat a 4-quart soup pot over medium heat and add the oil.





2. Add the leeks, onion, and sea salt and saute for about 5 minutes, stirring often, until the onion begins to turn translucent.





3. Add the garlic and stir well. Cook for 1 minute more.





4. Add the potatoes and vegetable stock, cover, and bring to a boil. Reduce heat to simmer. Cook 20 minutes.





5. Remove the soup from the heat and use an immersion/stick blender to blend the soup in the pot or ladle the soup into a blender, 1 cup at a time. Blend the soup with the fresh rosemary leaves until smooth and free of chunks. Pour smooth soup into a heat-proof bowl and continue until all of the soup has been blended.





6. Transfer the blended soup back to the original soup pot and warm over low heat until heated through. Serve hot.





Serves 4 - 6.

Eating smaller meals frequently thru out the day is actually healthier.


Anything made w/tofu, creamed soups, dips sauces, smoothies. Stir-fry w/tofu. Your favorite cracker w/peanut butter. Edamane shelled, ready to eat, or add canola, olive oil and favorite vinegar and toss w/spices.


Cooked lentils w/vegeys and rice, make it soup.

These are indian street foods that are made with dough stuffed with curry potatoes and peas and served with chutney. They are AMAZING and VEGAN!
Anything with a lot of water, protein, and fiber. Especially cruciferous veggies.
