What are some quick healthy recipes I can eat for a snack?

As school is soon to be starting again I wanted to know of some quick and healthy recipes I can make before getting started on home work.


What would you suggest I eat/make?


I'm might also freeze some fruit and other things so that I can leave them out in the morning and they will be ready to it when I get home, what foods/recipes are healthy and freeze well for this purpose? Thanks!What are some quick healthy recipes I can eat for a snack?
Keep a big jar of dry-roasted nuts and dried fruit %26amp; Craisins.. You can even take little baggies of this with you to school. ..... I used to layer yogurt with granola or apple-cinnamon wheat germ (in about 3 layers) in parfait glasses for my daughters. I'd do it the night before, and they'd have it for breakfast.....What are some quick healthy recipes I can eat for a snack?

Baked Cheese Wonton Cups


Filling:


2 green onions


3 ou. cream cheese, cut in chunks


1/3 cup mayonnaise


4 ou. grated cheddar cheese (or smoked gouda works well)


2/3 cup crabmeat, (Can vary the recipe with bay shrimp or chopped mushroom for the filling


2 tsp. Old Bay seasoning


1 tsp. fresh lemon juice


1/2 tsp. Essence of Emeril seasoning or something similar





Heat oven to 350 degrees. Lightly spray 12 small muffin cups. Melt 1 tablespoon of butter and lightly brush each wonton pastry before pushing into muffin cups.





Saute green onions. Melt cheeses and mayonnaise in pan. Add seasonings and lemon juice. Add filling (could be crab, shrimp, mushrooms) to heat only. Scoop into wonton cups. Bake 12-15 minutes until wontons are golden brown.








Bruchetta


Ingredients:


1/2 loaf Italian or French bread


1 small purple eggplant


1 large red pepper roasted and peeled (divided into 4 pieces)


4 slices mozzarella cheese


1/4 cup basil pesto


1 cup marinara sauce


1/2 cup olive oil to which 1 slivered garlic clove has been added








Slice 4-3/4'; thick pieces of bread from loaf. Brush one side of each with oil. Place on hot grill (may use broiler) until toasted. While browning, brush other side with oil, turn and toast. Remove from grill. Place toasted bread on a cookie sheet and top each with pesto.





Slice eggplant into 1/2'; slices. Cook eggplant in the same manner as bread.





Remove eggplant from grill or broiler and place each slice on top of each slice of bread. Place one piece of roasted pepper on top of each slice of eggplant and one slice of mozzarella cheese on top of each pepper. Bake in 450掳 oven until cheese melts. Remove and serve at once on a bed or marinara sauce. Serves 4.








Hot Artichoke Dip


Ingredients:





1 5 lb 8 oz can artichokes in water (drain in colander)


4 lb Grated mozzarella cheese


1 lb Grated parmesan cheese


3 cups mayonnaise


3 cloves garlic or 1 1/2 tsp chopped garlic





Method:





Put artichokes in cuisinart and blend just slightly.


Stir together in a large mixing bowl.





To serve bake desired amount at 350 degrees for about 20 minutes, until bubbling, and serve on toasted pieces of sour dough bread.Need snack recipes for bunco party!?

Nachos!!





Big bag of restaurant style UNsalted tortilla chips


1 large tomatoe, diced


1 4 oz. can of green chili peppers, drained


1 cup canned refried beans


chopped cilantro


1 cup shredded Cheddar cheese


1 cup shredded Jack Cheese





Heat oven to 425. Cover a large platter with the chips. Sprinkle half of the cheese over the chips. Drop teaspoons full of the beans over the chips, then sprinkle the chilis over this. Sprinkle half of the remaining cheese over this. Sprinkle the tomatoe, then balance of the cheese %26amp; then the cilantro. At this point, I usually add more chips by just sticking them in random %26amp; perpendicular, so they are sticking up.





Bake approx. 10 minutes, until cheese is melted.





Serve with store bought salsa, sour cream %26amp; guacamole or sliced avacado %26amp; maybe some Nacho sliced Jalapenos.





They will go quick, %26amp; if you bought the big bag of chips, be prepared to throw together another batch!
Appetizers- Jalapeno Poppers, mini Taquitos, fried onion rings with dipping sauce
MARINATED MUSHROOMS


1-1/2 lb. small button mushrooms


good Italian dressing


red or white wine vinegar


oregano


Wash the mushrooms well, and trim scant end of stems. Put into a large jar with the jar of Italian salad dressing, plus a little extra wine vinegar and some oregano. Marinade overnight. Serve in a bowl with toothpicks.... DO AHEAD





ARTICHOKE SQUARES


2 (6 oz) jars marinated artichoke hearts (cut up)


1 small onion, finely chopped


1 crushed garlic clove


4 eggs


1/4 c. dry fine bread crumbs1/4 tsp. salt


1/8 tsp. EACH pepper, oregano, tabasco sauce


1/2 lb. grated cheddar cheese


2 TB. minced parsley


Mix everything together really well; Put into greased 7x11'; baking pan. Bake at 325 for 30 min, or until set. Cut into squares. Serve warm, cold or room temp...DO AHEAD





Veggie platter w/dill dip (1/2 c. Dijon mustard; 1/2 c. sour cream, 2 TB. dried dill weed) .... Fruit platter with Orange Dip (Orange yogurt mixed with orange juice or Triple Sec) or Chocolate Dip (melt a can of storebought chocolate frosting %26amp; mix with a little brandy) ... Trail mix in a bowl (dry-roasted peanuts; dried tropical fruit bits) ... Pretzel rods (standing up in a large mug)

HELLO DOLLY BARS


1/2 c. butter


1-1/2 c. graham cracker crumbs


1 can sweetened condensed milk


1 (6 oz) pkg. semi-sweet chocolate chips


scant 1/2 c. flaked coconut


1 c. chopped nuts


Melt butter in bottom of 9x13'; baking pan. Remove from heat. Sprinkle crumbs over butter. Pour sweetened condensed milk evenly over crumbs. Top with chocolate chips, coconut %26amp; nuts. Press down gently. Bake at 350 for 25 min, or until golden brown. Cool %26amp; cut into bars (DECADENT)





LEMON BARS


1/2 c. powdered sugar


2 sticks (1 c.) butter


2 c. flour


Mix together as you would for a pie crust (until crumbly) and press into bottom of 9x13'; pan. Bake at 350 about 20, or until firm.


4 eggs


2 c. sugar


4 TB. flour


1/2 c. lemon juice


powdered sugar (to sprinkle on top)


Beat together ingredients for 1 min. Pour on top of baked crust. (It will look thin %26amp; strange, but that's ok)...Bake at 350 for 20 min, or until done. Cool 7-10 min; cut into squares and sprinkle with powdered sugar





This are all recipes that can be done the day ahead; and don't require any fussing once you set them out.... small pieces for easy snacking while you're playing....

Chippy Chocolate Cookies


Ingredients


1 cup butter flavored shortening or regular shortening with a little butter


3/4 cup white sugar


3/4 cup brown sugar


2 eggs


2 teaspoons vanilla extract


2 1/4 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon salt


1 white chocolate bar


1 dark chocolate bar


1 packet of oatmeal


A handful of walnuts








Directions


1 Preheat oven to 350 degrees. Grease cookie sheets.


2 In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate, walnuts, and oatmeal. Drop by rounded spoonfuls onto the prepared cookie sheets.


3 Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    Made the traditional way, honey joys are not very healthy for you, because they contain a lot of sugar. Here is a recipe for honey joys using splenda and light margarine:





    4 cups corn flakes


    1/4 cup Splenda


    2 1/2 Tbsp. light margarine


    1 tablespoon honey





    Mix above ingredients together and let sit until firm.

    The best and easiest treat to make for puppies is to get a size-appropriate KONG toy, stuff it, and freeze it.





    My 4-month old basset mix, Humphrey, gets one medium-sized KONG every day. I stuff it every morning with this mixture:





    1/2 a banana


    2 TBS ultra lo-fat, no sugar added peanut butter


    2 TBS Innova Evo Small Bites (his food - you can add whatever food your dog eats, obviously), softened with water


    1 baby carrot


    1 teaspoon water





    I mix the banana, peanut butter, water and dry food together into a (disgusting) paste. Goop some of it into the KONG. Bury the carrot in the center, deep enough that it won't just fall out, but close enough to the big opening so that Humphrey can get to it. Then I seal the KONG up with the rest of the mixture, ziploc it, and freeze it for 4 hours.





    It's a low-fat treat that takes minutes to make, feels great on his teething gums because it's frozen, is healthy and inexpensive, and - best of all - because it's frozen and the carrot is kind of buried, it takes him an hour to finish eating it!

    Pumpkin Granola Bars








    The pumpkin puree in this recipe makes these tasty granola bars nutritious.

    3/4 c. pumpkin puree


    1 egg


    1/4 c. butter at room temperature


    1/4 c. honey


    2 T. molasses


    2 c. rolled oats


    1/2 c. chopped peanuts, walnuts, or sunflower seeds


    2 T. shredded, unsweetened coconut


    1/4 c. rice flour


    1/2 t. ground cinnamon


    1 T. grated orange rind





    Blend the pumpkin, egg, butter, honey, and molasses in a mixing bowl or food processor. Add the oats, nuts, coconut, rice flour, cinnamon, and orange rind, and mix well. Spread this mixture into a lightly greased 15 1/2-by-10 1/2-inch jelly-roll pan. Bake in a 350 oven for 40 minutes or until golden brown. While still warm, cut into 3-by-1 1/2-inch bars. For very crisp bars, remove from pan to wire rack and cool completely.

    dash cinnamon (optional)

    PREPARATION:

    1 package of butterscotch chips


    6 c. of corn flakes





    directions: Mix peanut butter and butterscotch chips in a microwave bowl, melt on high for about 1 minute or until chips are melted thoroughly, stir. Add corn flakes, turning until all flakes are coated. Place by spoonful onto waxed paper. Refrigerate for 20 minutes, and serve.

    I once had a friend cook two incredibly delicious snack foods.


    one was like spicy rice krispies, the other, deep friend dough, made into a spiral shape (VERY spicy).





    Since they are snack foods - most restaurants dont offer them.

    You can take any normal recipes and replace the flour with rice or oat or potato flour, the eggs with a cornstarch mixture (1 tbsp of cornstarch mixed into 3 tbsp of cold water) and the sugars with your own sweetener. For denser flours, add more baking powder or baking soda to get them to rise. You may have to tweak the recipe a few times to get it the way you like it, but don't be afraid to experiment.     Baking with natural sweeteners is fun, easy, and tastes good! It is easy to convert any recipe, just reduce the amount of sweetener to 1/2, and use it to replace the same amount of another liquid.

    As for the no-wheat, have you tried spelt? Many people who cant tolerate wheat can handle spelt, it has a different sort of gluten and can be used like wheat in any recipe.

    I don't have any recipes for cookies, cakes or muffins because it's easy to convert from white sugar and flour to honey and say oat flour, but I have a great recipe for fudge.





    Carob Fudge Brownie


    Makes 12 pieces


    Keeps in fridge for 5 days


    1 1/4 c pitted dates


    3/4 c soaked raisins


    4 tbsp carob powder


    2 c Brazil nuts, presoaked overnight in cold water


    2 c water


    2/3 c ground flax seeds


    2/3 c sunflower seeds


    1/2 c chopped walnuts


    1/2 c whole walnuts


    sprinkle of sesame seeds





    1. Place the dates, raisins, carbow powder, Brazil nuts and 2 cups water in a food processor and blend until you have a smooth paste.


    2. Mix through the seeds and walnuts.


    3. Spread the mixture evenly on to a 8 x 8 or 9 x 9 baking dish lined with cling wrap.


    4. Sprinkle with sesame seeds and freeze for 1 hour

    Those are the finger foods i like, but if you want a little more try finger sandwiches, sandwich wraps, peanutbutter jelly and/or honey, or something similar. Also, frozen juice or yogurt is pretty good when you put it in ice trays and a toothpick in each. Hope that helps.

    INGREDIENTS


    2 cups white sugar


    3 tablespoons unsweetened cocoa powder


    1/2 cup margarine


    1/2 cup milk


    1 pinch salt


    3 cups quick cooking oats

    1 teaspoon vanilla extract


    DIRECTIONS


    In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute. Add quick cooking oats, peanut butter, and vanilla; mix well. Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.





    HAMBURGER COOKIES


    INGREDIENTS


    Red, green, and yellow food coloring


    1/2 teaspoon water


    1 container vanilla frosting


    1/4 cup flaked coconut


    48 vanilla wafers


    24 chocolate covered thin mints


    1 tablespoon sesame seeds





    DIRECTIONS


    In a bowl, combine food coloring with a few drops of water. Add coconut and cover the container, shake until coconut is tinted. Set aside. Divide frosting in half and add a few drops of yellow food coloring to one half, and a few drops of red to the other. Cover half the wafers with red frosting and coconut, and the other half with yellow frosting. Top each wafer with a peppermint patty. Place a peppermint patty in between. With a clean paint brush, brush the top of each hamburger with just enough water to moisten so that the sesame seeds will stick when sprinkled on top of each cookie.

    Ingredients:


    2 egg whites


    1 large sweet yellow onion (cut into rings)


    1/3 cup dry bread crumbs

    Methods:


    Mix egg whites, salt and pepper. Dip onion rings into egg mixture and than coat with breadcrumbs. Place in single layer on greased baking sheet. Bake 10 minutes at 450 degrees.








    HOT CABBAGE


    Serves 4





    Ingredients:


    3 cups Cabbage (finely chopped)


    1/2 Teaspoon Salt


    2 Tablespoons Vegetable Oil


    2 Tablespoons Italian Salad Dressing





    Methods:


    Sprinkle cabbage with salt and set aside for 30 minutes. Heat oil in skillet until very hot. Add the cabbage and stir fry about 2 minutes. Remove and add Italian dressing.











    PEACHY CARROTS


    Serves 6





    Ingredients:


    1 pound package carrots (sliced and cooked)


    1/3 cup Peach Preserves


    1 Tablespoon Margarine (melted)





    Methods:


    Combine carrots with margarine and peach preserves. Cook over low heat until carrots are heated thoroughly.








    CARROT CASSEROLE


    Serves 6





    Ingredients:


    1 Pound Package Carrots (sliced, cooked until tender)


    1/2 Cup Celery (Chopped)


    1/3 Cup Onion (Chopped)


    1/3 Cup Green pepper (chopped)





    Methods:


    Saute chopped celery, onion, and green pepper. Mash cooked carrots and mix with sauteed vegetables. Put in buttered baking dish. Bake 30 minutes at 350 degrees.








    BRAISED CELERY

    1/2 cup beef bouillon


    2 Tablespoon Chopped Fresh Parsley

    SNOW PEAS AND MUSHROOMS

    Ingredients:


    1 cup sliced mushrooms


    2 tablespoons margarine


    1/2 pound small snow peas


    1 tablespoon soy sauce





    Methods:


    Saut茅 mushrooms in margarine. Stir in snow peas and soy sauce. Cook until crisp-tender. Toss and serve.











    YAMMY BISCUITS





    Ingredients:


    2戮 (two and three-fourth) cups biscuit mix (retain 1/4 cup to flour board)


    1 can (17-ounce) Yams in Syrup (mashed, do not drain)


    录 cup melted butter





    Methods:


    Place biscuit mix in large bowl and cut yams and butter into it. Mix well, knead on floured board until dough is not sticky. (Knead in additional biscuit mix, if neccessary.) Pat out to 1/2-inch thickness and cut into biscuits. Bake 12 to 15 minutes at 400 degrees.





    Serving Idea - Appetizers served individually on toothpicks and be stuck into a grapefruit for an easy attractive way to serve.

    Ingredients:


    2 cups cabbage (shredded)


    2 Medium Apples (Cored, diced)

    1/3 cup vegetable oil

    3. In medium bowl, stir together flour, baking soda, baking powder, and salt.


    4. In large bowl, beat together sugar, oil, eggs, and 1 tsp vanilla extract until combined. Beat in cocoa mixture. Beat in flour mixture just until evenly moistened. Divide batter between prepared pans.


    5. Bake until toothpick inserted in centers of cakes come out clean, 25 to 30 minutes. Transfer pans to wire rack. Let cool 10 minutes. Turn cakes out onto rack. Let cool completely.


    6. Prepare icing: In medium microwave-saft bowl, microwave together chocolate and milk on high powder 1 minute. Stir until smooth. Whisk in cocoa powder until smooth. Whisk in cream cheese and 1/2 tsp vanilla extract. Stir in confectioners'sugar until combined.


    7. Place one cake layer on flat plate or platter. Spread top of this layer with jam. Place remaining layer over layer with jam on it. Spread icing over side and top of cake.

    3/4 cup granulated sugar

    1/2 cup skim milk


    2 1-ounce squares unsweetened chocolate


    2 tablespoons butter


    1 cup light brown sugar, packed


    1 cup hot water





    Preheat oven to 350 degrees F. Lightly coat a 10-inch pie pan with nonstick cooking spray.





    Mix together flour, sugar, 2 tablespoons of cocoa powder, baking powder and salt in a large bowl. Set aside.





    Combine milk, chocolate squares and butter in a small saucepan. Heat on low until chocolate and butter are melted. Blend well into flour mixture. Transfer batter into prepared pie pan, spreading evenly across bottom.





    In a small bowl, mix together brown sugar and 4 tablespoons of cocoa powder. Sprinkle evenly over batter. Place pie in oven and gently pour hot water over everything (this will create a brownie-like top and a gooey bottom). Bake for 40 minutes; center will be pudding-like.





    Remove pudding pie from oven and let cool slightly. Top each serving with a scoop of frozen yogurt.

    Fresh fruit is always healthy, apples, raisins, oranges, melons, dried Cranberries, dates, apricots, dried prunes, bananas, etc. Raw carrots are good too. Also full of fibre and vitamins.
    Fruit salad w chocolate(just a little) whipped cream when it's warm oh it's so good. Substitute all the ingredients in cookies including the chips, if you can make a more healthier chocolate.


    All sweets you can substitute , bleached flour/ wheat flour, 2% milk fat free but leave a little something in there. He won't notice, oh you can go to food network.com they had a whole week of healthy foods.
    Go with some youghurt-covered raisins for snacks, but for a sort of lunch, marinate some steak in low-fat italian dressing, and serve it with garlic-buttered green beans.

    6 tbs. butter/margarine

    Oven roasted herbed vegetable crisps.





    low fat cooking spray


    2 medium courgettes, sliced crosswise into 1/2 cm slices


    2 med parsnips, peeled and sliced crosswise into 1/2cm slices


    2 med sweet potatoes, peeled and sliced into 1/2cm slices.


    4 med crrots, peeled and sliced diagonally into 1/2 cm slices1 tsp salt or to taste


    1 tsp origano, or to taste.





    Preheat oven to gas mark 1/2 /130c/ 250f. Coat 2 large trays with spray oil.


    Arrange veg on trays, coat veg with spray and season with salt and oregano.


    Roast for 1 hour and then rotate trays. Roast for 1.5 - 2 hours total, or until crisps and crunchy and dry.





    (You could also do apples in the same method) omitting the salt and oregano.





    To keep crispy, store in an airtight container or storge bag for 3 days. To re-crisp already cooked crisps that have gone soft, cook on a baking tray for 10 mins at 130c/250f gas mark 1/2Original Snack Recipes?
    Punched up punch: Get an ice cube tray and fill it with raspberry koolaid, (flavor of your choice, I prefer raspberry in this one.) and let it freeze. To make your punch, cool 2 quarts of cranberry juice, (100% is best, but you can use the other kind) add 2 liters of cooled soda, (lemon lime, Sprite, Sierra Mist, 7-Up, or for a real bite Ginger Ale) mix just before serving. Put in the koolaid ice cubes and stir. The ice cubes will add just a touch of flavor to this punch. OR, you can use raspberry sherbet instead of the ice cubes. Serve with snack crackers and cheese or cake. This makes a nice Holiday Punch for dinner as it isn't too sweet and it cleans your palate. Also good all by itself.

    For something inbetween my classes that will fill me up, I make tortilla pizzas. They're simple and don't take long. Preheat the oven to 350, and get your ingredients.


    Medium or small size flour tortillas


    Any kind of spaghetti-type pasta sauce (My favorite are the Ragu ones)


    Mozarella cheese


    Toppings. (I use pepperoni)





    Get out a cookie sheet and lay out your tortillas. Spread on the pizza sauce, cheese, and your toppings.


    For small tortillas, bake at 350 for about 10 minutes. For the medium ones, bake at 350 for about 13 minutes.

    5-8 chicken wings

    1/4 tsp. garlic salt (not powder)


    1/4 tsp. onion salt


    About 3 lbs. wings





    Combine hot sauce, butter, garlic and onion salt; mix well in a pot and warm the sauce.


    Dip wings in warm sauce until coated (if sauce is cold it won't coat well). Save remaining sauce.





    Cook on grill 30 to 40 minutes or until brown, turning frequently to prevent too much burning (a little makes them taste better).





    Place wings in a large skillet (cast iron works best). Pour in remaining sauce, cover and simmer slowly for about 1/2 hour.





    Alternate plan. Place chicken in baking dish. Pour on remaining sauce and then cover dish. Bake in oven at 350 degrees for 45 minutes.





    Serve hot with a good blue cheese dressing and celery sticks. Alternate plan. Cooked wings freeze well. I usually make a large batch and freeze some. Simply reheat and eat. WARNING: The more you reheat this stuff, the hotter (i.e. spicier) it gets.

    HEAVENLY HAM SANDWICHES





    1 c. butter, softened (no subs)


    3 Tbsp. poppy seeds


    1 tsp. Worcestershire sauce


    3 Tbsp. prepared mustard (or use a sweet-hot mustard)


    1 medium onion, minced


    1 lb. cooked ham, chopped-to-minced


    12 oz. shredded Swiss cheese (can sub 陆 Cheddar)


    60 small party rolls (Pepperidge Farm) or biscuits





    Mix butter, poppy seeds, Worcestershire sauce, and mustard. Add onion, ham and cheese; mix well. Slice rolls lengthwise and place bottom 陆 back in pan. Spoon mixture over rolls. Place top 陆 of rolls over mixture. Bake at 325掳 for 15 minutes or until heated throughout. (These can be frozen before baking.)


    Great appetizer. Also good for brunch.

    1 (8 oz) package cream cheese, softened


    1 Tbsp. taco seasoning mix


    1 cup prepared guacamole


    1 cup salsa


    1 cup shredded lettuce


    1 cup shredded cheddar cheese

    1 (2-oz) can sliced black olives





    Mix cream cheese and seasoning mix. Spread on bottom of 9 inch pie plate or quiche dish. Layer guacamole, salsa, lettuce, cheese, onions and olives over cream cheese mixture. Serve immediately w/ sturdy corn chips. Refrigerate any remaining dip.

    3 Tbsp. butter, melted


    3 eggs


    1 cup SR flour


    1 cup milk


    1 tsp. salt


    2 (10 oz) frozen broccoli, cooked and drained

    2 Tbsp. chopped onion


    1/4 tsp. pepper





    Pour Butter into 9x13 dish or pan. In a bowl beat eggs add milk then flour and salt/pepper. Mix in broccoli, onion and cheese.


    Spoon into baking dish. Bake 350* for 30-35 mins...until starts to brown along edges. Allow to stand 5 minutes and cut into squares or triangles.





    For a bridal shower 36 servings. (tiny squares)


    Larger squares today for luncheon. Probably 12 servings..more or less according to how large your squares....

    1 red bell pepper, minced


    1 lb. pork sausage


    1 cup mayo

    Take wontons a place in muffins tins to make a cup. Bake 350潞F until tips are golden brown.





    Fry up sausage then add bell pepper just to make warm. Mix mayo, sour cream, ranch %26amp; cheese in bowl, then add warm sausage mixture. Spoon mixture into wonton cups. Right before serving, place in oven again for 1-2 minutes to warm and melt cheese.

    2 tablespoons olive oil


    2 ounces bacon, finely chopped


    陆 cup finely diced red bell pepper


    陆 cup diced tomatoes


    鈪?cup chopped shallots


    2 large garlic cloves, minced

    4. Add the bell pepper, shallots, garlic, and oregano to the same skillet and saut茅 until the shallots are tender and translucent, about 5 minutes.


    5. Add the wine and simmer until it is almost evaporated, about 2 minutes.


    6. Remove the skillet from the heat and cool completely.


    7. Stir the reserved pancetta and 2 tablespoons of Parmesan cheese into the vegetable mixture. Season the mixture, to taste, with salt and pepper.





    Preheat the oven to 500 degrees F.





    1. Line a heavy large baking sheet with foil.


    2. Arrange the clams in the reserved shells on the baking sheet.


    3. Spoon the vegetable mixture atop the clams, dividing equally and mounding slightly.


    4. Sprinkle with the remaining 2 tablespoons of Parmesan.


    5. Bake until the clams are just cooked through and the topping is golden, about 10 minutes.


    6. Arrange the clams on the platter and serve.
    Here's what I made tonight for a big snack...I didn't really have dinner.





    Using your broiler, toast an English muffin, then top with American Cheese and thin sliced ham (I've sometimes used bacon) and put it back under the broiler until the cheese melts and the ham is warm. Delicious with a glass of milk!

    I'm not sure about your egg tarts recipes, but a delicious baked egg is to line a muffin cup (or custard cup) with thin sliced ham, then add a little shredded cheese and crack an egg into it. Bake in 400 F oven for about 15 minutes...depends how well set you like the yolk.

    I take home made cookies and sometimes brownies. Store them a hard plastic container. If they aren't loaded with frosting or glaze, they'll do just fine.





    I often take those powdered donuts and hard cooked eggs for breakfast. They make an easy breakfast served with coffee and juice. No cooking.





    I cook the main meals at home, pack them in airtight containers, freeze the food and then reheat it at the lake. I've done this with red green chili burritos, sliced roast beef in gravy, fried chicken fingers, prepared mashed potatoes, spaghetti sauce with meatballs (pre-cooked but didn't freeze the pasta). You can take whatever you like really. If you can freeze it and reheat it in a skillet or saucepan, you can serve on family camping trips.





    I don't like to haul salad stuff. But, I take plenty of fruit: grapes, oranges, peaches, canned pineapple, melons. I have successfully packed cucumbers and baby carrots. Serve them with some ranch dressing.





    I've gotten really efficient with this stuff over the years. I take three coolers. Frozen food goes in one, drinks in another and the third one for things that don't need to be cold like seasonings, coffee, sugar, creamer, tea bags, bread, mustard, etc. It keeps the ants, flies and kids from getting into stuff.What are some good, non melting snack ideas and/or recipes for the lake?

    Cheesy Pizza Snacks recipe


    1/4 cup Parmesan cheese


    1 tablespoon dry spaghetti sauce mix


    2 teaspoons garlic powder


    8 cups Crispix cereal


    4 cups pretzel nuggets


    3 tablespoons vegetable oil





    Combine Parmesan cheese, spaghetti sauce mix and garlic powder. Set aside.





    In a bag, combine Crispix cereal and pretzel nuggets. Pour oil over cereal mixture. Close bag and gently toss cereal mixture until well coated. Add Parmesan cheese mixture and close bag. Gently toss cereal mixture until well coated.

















    Zesty Texas Snack Mix








    6 tablespoons butter or margarine


    1/4 cup hot red pepper sauce


    2 tablespoons Worcestershire sauce


    1 tablespoon chili powder


    1 teaspoon oregano


    2 cups Fritos corn chips


    2 cups Crispix cereal


    2 cups Ritz Bits mini cheese crackers


    2 cups Corn Nuts


    1 1/2 cups pretzel goldfish


    1 cup roasted pumpkin seeds


    1 cup Texas pecan halves





    Preheat oven to 250 degrees.





    In a large shallow baking dish, melt butter. Add red pepper sauce, Worcestershire sauce, chili powder and oregano; stir.





    In a large bowl, combine Fritos, Crispix, Ritz Bits, Corn Nuts, pretzel Goldfish, pumpkin seeds and pecans. Add mixture to melted butter mixture in baking dish; toss to coat thoroughly. Bake 1 hour, stirring every 10 minutes.





    Cool completely, store tightly covered

















    Honey-Spice Pretzels


    Serving Size : 4





    4 cups nonfat pretzel sticks


    3 tablespoons honey


    2 teaspoons margarine -- melted


    1 teaspoon onion powder


    1 teaspoon chili powder





    Heat oven to 350 degrees. Line cookie sheet with aluminum foil; spray with


    cooking spray. Place pretzels in large bowl. Mix remaining ingredients; drizzle


    over pretzels, stirring to coat.





    Spread pretzels evenly on cookie sheet. Bake 8 minutes, stirring once. Cool on


    sheet. Loosen pretzels from foil. Store in airtight container at room


    temperature.














    Spiced Vanilla Pecans








    1 pound whole pecan halves


    6 cups water


    1/2 cup superfine sugar (not confectionery or granulated)


    3 tablespoons unsalted butter, melted


    1 tablespoon light corn syrup


    1 tablespoon vanilla extract


    1/4 teaspoon salt


    1/4 teaspoon ground coriander


    1/4 teaspoon ground cinnamon


    1/4 teaspoon ground nutmeg


    1/4 teaspoon ground allspice


    1/8 teaspoon ground black pepper





    In a large saucepan, boil the pecans in the water for 1 minute. Drain well. While they're still hot, toss them in a large bowl with the sugar, melted butter, corn syrup and vanilla extract. Mix well and let the nuts sit, covered, for at least 12 hours, up to 24.





    Preheat the oven to 325 degrees F. Put the nuts on a rimmed cookie sheet. Bake them for 30 minutes, stirring them every 5 minutes. The nuts should be well browned - though I realize they start out brown, so what you're looking for is a darker brown - and crisp-looking. Of course they won't really be crisp until they're cool.





    Meanwhile, combine all the spices in a large bowl. The instant the nuts are done, add them to the spices and toss until they're well coated.





    Pat the nuts back down on the cookie sheet in a single layer, so that they can cool without clumping. Cool them thoroughly and store airtight.





    Makes 1 pound.














    Spicy Mixed Nuts





    3 tablespoons butter or margarine


    1 envelope Lipton golden onion recipe soup mix


    1/4 cup sugar


    1 teaspoon ground cumin


    1 jar unsalted dry roasted mixed nuts -- (8 ounces)





    Blend dry soup mix with sugar and cumin.





    In a large skillet, melt the butter and stir in the dry soup mixture.





    Add nuts and cook over medium heat about 5 minutes or until nuts are coated with mixture and golden brown.





    Serve warm or cool on a baking sheet.





    May be stored in an airtight container for up to 2 weeks. Makes 2 1/2 cups.














    Glazed Nuts


    1 1/2 Cup sugar


    1/2 cup sour cream


    1 1/2 tsp. vanilla


    1 1/2 quart pecan halves





    Mix sugar and sour cream in heavy saucepan.


    Cook over medium heat to soft ball stage.


    Cool slightly, add vanilla, then add nuts.


    Stir until well coated. Spread nuts on wax


    paper. Cool completely. Break apart.


    Store in airtight container























    SESAME TREATS


    Yield: 1 Batch





    1 1/2 c AM Sesame Seeds


    1/2 c AM Sunflower Seeds


    1/2 c Chopped nuts


    3/4 c Coconut


    1 c Honey


    1 ts Sea salt(optional)


    1/2 c AM Peanut Butter


    2 tb Carob powder





    Mix first four ingredients together. Mix remaining ingredients in a


    separate bowl, then stir into dry mixture. Spread into an oiled,


    square casserole dish. Freeze until firm, then slice into bars and


    serve.














    Hidden Valley Oyster Crackers





    12-16 oz. plain oyster crackers


    1 pkg. Hidden Valley Ranch Salad


    Dressing Mix


    1/2 tsp. lemon pepper


    1 1/2 tsp. dill weed


    1/2 tsp. garlic powder


    3/4 c. salad oil





    Combine Hidden Valley Ranch dressing mix and oil in a small bowl. Add dill weed, lemon pepper and garlic powder. Pour over crackers; stir to coat. Place seasoned crackers in a warm oven for 15-20 minutes

    1 cup oil


    2 pkg. dry ranch salad dressing


    1 tsp. dill weed

    4 Cups Honey-Nut cheerios (Generic is also good)


    4 Cups Rice Chex


    2 Cups pretzel stix, broken (or whole)


    2 cups salted mixed nuts or salted peanuts


    Mix all together in a really big bowl, Then:


    melt 1 (or more) cup butter, stir in 1/4 cup sugar or karo syurp and mix into the cereal mix.


    spread no more than 1'; deep in shallow baking pans and bake at low heat 250 or 300 degrees for an hour or so, stir about every 15 minutes.

    Ingredients





    1 egg


    1/2 cup brown sugar


    l tsp. vanilla extract


    l cup granola


    1/2 cup raisins (or any chopped dried fruit)


    1/2 cup chopped hazelnuts (or your favorite nut)


    1 1.69-oz. pkg. M%26amp;M's chocolate candies





    Directions








    Preheat the oven to 350 degrees. Generously butter or oil an 8- x 8-inch square pan (preferably nonstick). Crack the egg into a medium-sized bowl. Add the sugar and vanilla extract and mix thoroughly.





    Stir in the granola, raisins, hazelnuts and M%26amp;M's and mix until combined.





    Transfer to the pan and distribute evenly over the bottom, pressing firmly with your hands.





    Bake for 25 minutes. Cool and cut into bars or squares.





    Serves 8 to 12.











    Smoked Turkey and Apple Wheelies





    This wrap sandwich, from the new book Wrap it Up (Three Rivers Press), is very low in fat, but you won't miss it. You can buy smoked turkey and lavash, a flat bread, in the deli section of most supermarkets.


    Ingredients








    2/3 cup plain low-fat yogurt


    1 1/2 to 2 tbsp. drained bottled horseradish, to taste


    4 lavash squares (about 8 x 10 inches)


    8 large red lettuce leaves


    l lb. sliced smoked turkey


    l firm apple, such as Granny Smith or Cortland, cored and sliced





    Directions








    Stir the yogurt and horseradish in a small bowl. Spread each lavash square with 1 tablespoon of the horseradish mixture.





    Top each with two lettuce leaves and one quarter of the turkey. Spread one more tablespoon of the sauce on top, then cover with one quarter of the apples. Roll, then wrap well in plastic.





    When ready to eat, cut in half. Or, cut into 2-inch ';wheelies,'; attaching toothpicks, if necessary.


    Serves 4.





    COOKING TIP:


    For kids, replace the horseradish-yogurt sauce with mayonnaise. If you can't find lavash, substitute burrito-size flour tortillas and soften according to package directions.








    Rainbow Potato Salad





    Ingredients





    3 tbsp. red wine vinegar


    2 tsp. Dijon mustard


    2 scallions, sliced


    1 1/2 tsp. salt


    1/4 tsp. pepper


    3 tbsp. olive oil


    1/4 cup chicken broth


    4 carrots


    1/4 lb. fresh green beans


    2 lbs. new potatoes, unpeeled





    Directions








    Combine the vinegar, mustard, scallions, salt and pepper in a large bowl. Whisk in the olive oil, then the chicken broth.





    Peel the carrots and slice on the diagonal. Snap off the ends of the green beans and cut them on an angle into thirds. Bring a large pot of water to a boil, add the potatoes, and cook until tender, about 25 to 30 minutes (do not overcook). During the last 1 to 3 minutes, add the vegetables, then drain.





    Quarter or slice the potatoes and add them with the vegetables to the bowl of dressing. Toss and refrigerate for 1 hour or until ready to eat. Serves 4 to 6.

    maybe sugar free candies? low fat/ sugar free/ low sugar ice cream/ popsicles. I would recommend meat and veggie stir frys for her meals. Egg stir fry or omelette for breakfast, Lunch- chili or beef stir fry Dinner: chicken stir fry/ beef stir fry.

    This is what you need - Mummy Faced Mini Pizzas. They are soooo cute! And not just another sweet:





    RECIPE INGREDIENTS:


    English muffins


    Pizza sauce


    Black olives


    Red or green pepper


    Cheese sticks or slices





    1. Heat the oven to 350掳 F. For each mummy, spread a tablespoon of pizza sauce onto half of an English muffin (toast it first, if you like).





    2. Set olive slices in place for eyes and add round slices of green onion or bits of red or green pepper for pupils.





    3. Lay strips of cheese - I used a pulled-apart cheese stick - across the muffin for the mummy's wrappings. Layer it so that it looks like the bandage wrappings on a mummy.





    4. Bake for about 10 minutes or until the cheese is melted and the muffin is toasty.





    I have tried these because I intend to make them at Halloween, and they turned out great and really cute. You can see a picture of what they should look like at the family fun website.


    Any good snack recipes for a halloween party?
    snacks that are halloween themed are a necessity to every halloween sleepover! one idea that i tried last year with my friends was finger cookies! you can pick up a roll of sugar cookie dough at your super market aswas well black or orange frosting tubes, then you set the oven to the temtemperaturested. while the oven is heating up roll the cookie dough into finger shaped figures. make sure the ';fingers'; aren't too skinny or don't have enough dough, because it will burn them, oh and don't make them too fat, or too much dough cause it will take forever to cook ! also feel free to make lines where the knuckles are on the dough! after you finish baking the cookies let them cool for atleast least minutes. after they are done cooling add the frosting where the nail would be! if you want you could also buy fake blood at a party store.. its edible, and makes the cookies fit the halloween theme! the cookies are easy to make, and if they don't turn out perfect, they still taste delishh!
    Food for a party.

    well i you should cook fairy buns together at the sleepover and put some dark food coloring in to make it look spooky or what i always do is put sprinkles in the batter and then when they come out of the oven there all colorful it looks cool lol

    Bananas in Caramel Sauce





    INGREDIENTS


    1/2 cup butter


    1 cup superfine sugar


    1 1/4 cups heavy cream


    4 bananas, peeled and halved lengthwise





    DIRECTIONS


    In a large, heavy skillet over medium heat, melt butter. Stir in sugar and cook, stirring, until sugar is melted and light brown. Slowly stir in the cream (mixture will bubble up). Let boil 1 minute, then reduce heat to low. Place the bananas in the pan and cook until heated through, 2 minutes. Serve hot.




















    Pecan Crackers





    INGREDIENTS


    1/2 (16 ounce) package graham crackers


    2 cups chopped pecans


    1/2 cup white sugar


    1/2 cup butter


    1/2 cup margarine





    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C).


    Line a baking sheet with graham crackers. Sprinkle evenly with pecans.


    In a small saucepan over medium heat, combine sugar, butter and margarine. Bring to a boil and boil 3 minutes. Remove from heat and spoon mixture over pecans, coating well.


    Bake in preheated oven 12 minutes, until golden. Cool completely before serving.























    Peach Brulee





    INGREDIENTS


    1 (15 ounce) can peach halves, drained


    1/4 cup packed brown sugar


    1/2 teaspoon ground cinnamon


    1/4 cup coarsely chopped pecans





    DIRECTIONS


    Preheat the broiler.


    Arrange peach halves, cut-side up in a shallow baking dish. In a small dish, stir together the brown sugar, cinnamon, and chopped pecans. Sprinkle the mixture over the peaches.


    Broil 3 inches from heat for 2 to 3 minutes, or until the topping is browned. Serve with whipped cream or vanilla ice cream.























    Peach Crisp





    INGREDIENTS


    1 (29 ounce) can sliced peaches, drained


    2 cups all-purpose flour


    1 1/2 cups white sugar


    1 pinch salt


    1 tsp ground cloves


    2 teaspoons ground cinnamon


    1 cup butter, chilled





    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C).


    Layer the peaches in a 9x13 inch baking pan. In a large bowl, mix the flour, sugar, salt, cloves and cinnamon. Slice the butter into chunks and mix it into the dry ingredients until it looks like pea size crumbs. Sprinkle crumbs over peaches.


    Bake for 30 to 40 minutes in the preheated oven, until lightly golden.























    Buckeye Balls





    INGREDIENTS


    1/2 cup butter, melted


    1 pound confectioners' sugar


    1 1/2 cups peanut butter


    1 teaspoon vanilla extract


    2 cups semisweet chocolate chips


    1 tablespoon shortening





    DIRECTIONS


    Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.


    In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm.




















    Chow Clusters





    INGREDIENTS


    2 cups semisweet chocolate chips


    2 cups butterscotch chips


    2 (5 ounce) cans chow mein noodles


    1/2 cup cashew halves





    DIRECTIONS


    In a heavy saucepan, combine chocolate and butterscotch chips. Melt, stirring constantly over low heat.


    Remove when melted and add chow mein noodles. Add cashews or peanuts. Mix quickly to coat Dip out tablespoons onto wax paper. Cool. (Can also melt chips in the microwave.)



    Just get some sara lee pound cake, or any store brand. Get some berry flavored cream cheese, strawberries and nutella. Slice the pound cake, and strawberries. Put the cream cheese on one slice of the pound cake, and nutella on the other and the strawberries. YOu have yourself a yummy sweet treat:] You can also toast the pound cake if you want to.
    banana cheesecake


    Ingredients:


    2 packages (21.4 ounces each) strawberry no-bake cheesecake mix


    3/4 cup butter, melted


    1/4 cup sugar


    3 cups cold milk


    1 can (8 ounces) crushed pineapple, well drained


    3 medium firm bananas, sliced


    1/2 cup chocolate ice cream topping, warmed, divided


    1/2 cup caramel ice cream topping, divided


    1 carton (8 ounces) frozen whipped topping, thawed


    1/3 cup chopped pecans


    Maraschino cherries with stems


    Directions:


    Set aside filling and strawberry topping packets from cheesecake mixes. Place the contents of the crust mix packets in a large bowl; stir in butter and sugar until crumbly. Press into an ungreased 13-in. x 9-in. dish.


    In a large mixing bowl,Beat milk and contents of filling packets on low speed until blended. Beat on high for 3 minutes or until slightly thickened. Spread over the crust. Cover and refrigerate for 1 hour.


    Spread contents of strawberry topping packets over cheesecake. Top with pineapple and bananas. Drizzle with 1/4 cup of chocolate topping and 1/4 cup caramel topping. Spread with whipped topping (dish will be full). Refrigerate for 2 hours or until set. Before serving, drizzle with remaining chocolate and caramel toppings. Top with pecans and cherries. Yield: 16-20 servings.






    Jenny's Christmas Pie:





    1 can Eagle Brand Milk


    1/3 cup fresh lemon juice


    1/2 pint heavy whipping cream


    1 tsp vanilla


    1 tsp almond extract


    1 graham cracker crust


    1 container raspberry or cherry pie filling





    Mix milk with lemon juice and stir to thicken. Whip cream with extracts and fold into milk mixture. Spoon into graham cracker crust. Top with pie filling.
    Ingredients: (1) Container of Cool Whip


    (1) Graham Cracker Pie Shell


    (1) Package of Jello Instant Pudding





    Make pudding as directions say. Put in fridge to set (usually about an hour). Take out and add half of cool whip. Pour in pie shell. Place the rest of cool whip on top and spread.





    It's as simple as that.

    I make amaretto brownies. Follow the recipe on the back of a brownie box,but add amaretto instead of water I also add a little chocolate syrup, about 1 tablespoon. bake as normal. They taste so good and are very rich.
