Recipes for a healthy but delicious snack?

I love to bake but there's no such thing as a healthy cookie or pastry.. is there?


Does anyone know a good recipe or recipe site?Recipes for a healthy but delicious snack?
I would reccomend buying a book named ';Eat this Not That'; great bookfor making the right choices to eat. you can buy it at Costco wholesaleRecipes for a healthy but delicious snack?

Pistachio, fig %26amp; lemon biscotti


Everyone deserves a little treat with their morning or afternoon cuppa, and these biscotti are low GI and low fat. Perfect!


Preparation Time 20 minutes Cooking Time 40 minutes


Ingredients (serves 30)


鈥?Melted butter, to grease


鈥?55g (1/3 cup) pistachio kernels


鈥?3 egg whites


鈥?80g (1/3 cup) caster sugar


鈥?1 tbs finely grated lemon rind


鈥?115g (3/4 cup) plain flour, sifted


鈥?80g (1/3 cup) finely chopped dried figs


Method


1. Preheat oven to 180掳C. Brush a 7 x 25cm (base measurement) bar pan with melted butter to lightly grease. Line the base and 2 long sides with non-stick baking paper, allowing it to overhang.


2. Place pistachios in a heatproof bowl. Cover with boiling water and set aside for 5 minutes or until skins soften. Drain. Peel off skins and dry on paper towel.


3. Meanwhile, use an electric beater to whisk the egg whites in a clean, dry bowl until soft peaks form. Add the sugar, one spoonful at a time, whisking well after each addition, until sugar dissolves. Add the lemon rind and whisk until combined.


4. Combine flour and figs in a bowl. Use your fingers to separate figs and coat in flour. Fold fig mixture and pistachios into egg-white mixture until just combined.


5. Spoon mixture into prepared pan and smooth the surface. Bake in oven for 30 minutes or until cooked through. Turn onto a wire rack and set aside for 1 hour or until cooled to room temperature.


6. Preheat oven to 160掳C. Use a serrated knife to cut loaf crossways into 5mm-thick slices. Place in a single layer on a baking tray. Bake in oven for 10 minutes or until crisp and golden. Cool on tray.





Flour less chocolate cake


Just because it's Monday, doesn't mean you can't eat chocolate cake. In any case, this flourless version is low in both carbs and fat, so it's free of sin and full of taste!

Ingredients (serves 8)


鈥?Melted reduced-fat dairy spread, to grease


鈥?50g (1/2 cup) cocoa powder


鈥?80ml (1/3 cup) hot water


鈥?2 tsp instant coffee powder


鈥?2 tsp boiling water


鈥?1 x 100g pkt almond meal


鈥?100g (1/2 cup) caster sugar


鈥?3 eggs, separated


鈥?Strawberries, washed, sliced, to serve


Method


1. Preheat oven to 180掳C. Brush a round 22cm (base measurement) cake pan with melted dairy spread to lightly grease. Line the base with non-stick baking paper.


2. Combine the cocoa powder and hot water in a medium bowl. Combine the instant coffee powder and boiling water in a cup. Add the coffee to the cocoa mixture and stir until combined.


3. Add almond meal, sugar and egg yolks to cocoa mixture, and stir until well combined.


4. Use an electric beater to whisk egg whites in a clean, dry bowl until soft peaks form. Use a metal spoon to fold a spoonful of egg whites into cocoa mixture until combined. Gently fold in remaining egg whites until just combined.


5. Pour mixture into prepared pan. Place cake pan in a roasting pan. Pour enough boiling water into the roasting pan to reach two-thirds of the way up the side of the cake pan. Bake in preheated oven for 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from oven. Remove cake pan from water bath and set aside for 20 minutes to cool. Turn cake onto a wire rack and remove paper. Set aside for a further 20 minutes or until cooled to room temperature.


6. Cut cake into wedges and carefully transfer to serving plates. Serve with strawberries.





Banana bread and butter pudding


Need a few good reasons to try this new twist on an old favourite? It's low fat, low GI and really easy to make!


Ingredients (serves 4)


鈥?40g reduced-fat spread


鈥?9 slices oatbran and honey bread


鈥?2 cups skim milk


鈥?3 eggs


鈥?2 tablespoons yellow box honey (see note)


鈥?1 teaspoon ground cinnamon


鈥?2 small bananas, thinly sliced


鈥?low-fat ice-cream or custard, to serve


Method


1. Preheat oven to 170掳C. Spread reduced-fat spread over both sides of bread slices. Cut off crusts. Cut each slice of bread in half.


2. Whisk milk, eggs, honey and cinnamon together in a jug.


3. Layer bread over a greased 5-cup, ovenproof dish. Top with banana slices.


4. Pour over milk mixture. Set aside for 10 minutes. Bake for 45 to 50 minutes or until puffed and golden. Serve with ice-cream or custard.

microwave a 1'; cube of cheese on a plate in the microwave until it becomes just like a crispy cracker, blot off the grease, and enjoy...tastes really yummy with smeared cream cheese.





Diet rootbeer with a packet of sweetener and a glug of whipping cream...tastes like a rootbeer float...mmmm...





raw almonds





low carb tortillas and cheese, fill with your choice of meat and salsa...make a quesadilla or burrito...





chicken caesar salad





also, get a low carb tortilla, spread a little butter on it, sprinkle with cinnamon and splenda sweetener





Swiss Chocolate Ice Cream





Ingredients:


1 pint heavy whipping cream


4 egg yolks


1/2 tablespoon vanilla extract


1/2 teaspoon almond extract


1/4 cup sugar free chocolate syrup


1/4 cup Splenda


1 scoop low carb chocolate shake mix


Heat heavy whipping cream in saucepan over low heat. Separate 4 eggs and whisk 鈥?one yolk at a time 鈥?into heavy whipping cream. Whisk in extracts, sugar free syrup, Splenda, and chocolate shake mix. When totally blended, remove from heat and let cool completely. Place in prepared ice cream maker. Stir until frozen.





Servings. 3.5 net grams of carbohydrate per serving.

Atkins-Friendly Cheesecake








2 x 8-ounce packages of ceam cheese


22 packets Splenda


1/2 teaspoon vanilla extract


2 eggs





1. Mix cheese, Splenda and vanilla.


2. Add eggs. Mix well with electric mixer.


3. Bake in pie plate at 350 degrees F for 40 minutes. Cool three hours.





Based on individual serving.

If you like nuts, you can try baking nuts, like walnut. Nuts have lot of healthy fats and are very delicious as snacks.





I moister the walnuts in eggs whites, and cover them in a mixture of sugar and Cinnamon. Then put the walnuts on a baking sheet, and bake it till done.
