Tofu as snack recipes?

We are looking for recipes. Anyone have any or know a good website? we've tried searching %26amp; haven't found any. We are not vegatarians, just looking for alternative protein source for husband.Tofu as snack recipes?

Tasty Tofu Brownie Snacks:

12 brownies





Dry


1 1/3 cups cake flour or buckwheat flour


1/2 teaspoon baking soda


1/2 teaspoon cinnamon


Wet


1/4 cup applesauce or prune puree


1 teaspoon canola oil (optional)


3/4 cup sugar or sugar substitute


12 1/3 ounces firm silken tofu


1 teaspoon vanilla extract


1 teaspoon almond extract (optional)


1/3 cup Dutch-processed cocoa powder


Garnish


2 tablespoons walnuts, chopped (optional)





1. Preheat oven to 350掳F.


2. Pam an 8X8 pan.


3. Mix all the dry ingredients. The recipe says use food processor, however, since you are simply mixing them well, it is easier to do it by hand.


4. Use the processor for this or have a LOT of energy: Place all the wet ingedients in a work bowl and process until smooth. Scrape the sides of the bowl as needed.


5. When smooth add the dry ingredients all at once and pulse until just moistened.


6. Scrape into pan and sprinkle with nuts.


7. Ours formed a ball that simply ';fell out'; leaving the processor almost clean. It did not effect the end result at all.


8. Bake for 22 minutes or until they pull away from the sides of the pan. Let cool for 15 minutes before turning out of the pan.

Avocado Tofu Dip recipe


4 ripe avocados


1/2 pound tofu


2 tablespoons picante sauce (Pace)


1/4 teaspoon garlic powder





Blend avocado and tofu in blender until smooth. In bowl, mix avocado mixture, picante sauce and garlic powder.








Crispy Tofu Fingers recipe


12 ounces extra-firm tofu


4 ounces thick sauce (vegetarian oyster-style sauce, sweet


and sour sauce, barbecue sauce or other favorite)


1 teaspoon vegetable oil


Salt, garlic powder or other seasonings as desired.





Coat a cookie sheet with oil. Slice tofu lengthwise, about 1/4 inch thick, and pat dry. Put the sauce into a dish, and dip each piece of tofu into the sauce, coating it well. Place the tofu on the cookie sheet in a single layer. (Pieces can be touching, but should not overlap.) Sprinkle on desired seasoning. Bake at 400 degrees F for 20 to 30 minutes, depending on how crispy you like it.








Anasazi-Tofu Enchiladas recipe


1 cup slightly pur茅ed Anasazi beans


1/2 cup cooked rice


1/2 cup tofu, drained very well


1/4 cup chopped green or red bell pepper


1/4 cup chopped scallion


1 cup grated Cheddar cheese


1 cup grated Monterey jack cheese


10 ounces enchilada sauce


10 corn tortillas





Mix first five ingredients together. Add 2 tablespoons enchilada sauce. Moisten tortillas in warmed enchilada sauce. Fill tortilla with mixture and roll. Place in greased 11 x 7-inch baking pan with the opening of the tortilla down. Any remaining sauce should be poured on top of the enchiladas once the pan is filled. Place cheeses on top and bake at 300 degrees F for 35 to 40 minutes.





Tofu Fudge Mocha Bars recipe


1 (12 ounce) package silken tofu, undrained


2 tablespoons safflower oil


1 pinch salt


2 1/3 cups turbinado sugar (unrefined sugar)


1 cup cocoa powder


1/3 cup instant decaffeinated coffee powder


1 teaspoon vanilla extract


1 cup whole wheat flour





Preheat oven to 325 degrees F.





Using an electric mixer, blend tofu until creamy. Add oil, salt, sugar, cocoa, coffee and vanilla extract and blend well.





When sugar is dissolved into the tofu mixture, remove the bowl from the electric mixer and whisk in the flour. Pour batter into a greased 13 x 9-inch baking pan. Bake for 25 to 30 minutes or until the cake pulls away from the sides of the pan. The bars will appear glossy and almost underdone. Cool in the pan. When cool, cut into bars using a clean, wet knife.





Makes 24 bars.
Take extra firm tofu and drain thoroughly. Slice horizontally and marinate in one of your favorite Lawry's 30 minute marinades. Preheat oven to 325. Marinate for at least 1 hour and then place on greased baking sheet. Bake for 30 minutes and turn over. Repeat every thirty minutes until tofu has browned and shrunk slightly in size. Remove from oven and cool. At this point you can slice and eat for snacks or add to salads etc. Store in fridge.
