Healthy snack and dessert recipes?

Please my dad is watching his weight and I want to make him something healthy that he can snack on when i'm at school or a healthy dessert that will replace all the chocolate he eats. He's a Chocoholic I guess you can say. :) So please healthy recipes are needed.Healthy snack and dessert recipes?
Wake up to this immune-boosting antioxidant cocktail that supplies all your vitamin A for the day and more than half your requirement for vitamin C.





#1 ___CARROT- ORANGE JUICE





11/2 cups fresh or bottled carrot juice, chilled


2/3 cup fresh-squeezed orange juice ( 3 oranges)


1/2-inch-thick slice peeled fresh ginger





In bowl, mix carrot juice and orange juice. Crush ginger in garlic press to fill 1/2 tsp. Stir crushed ginger into juice mixture and serve. ( If making ahead, stir before serving.)





#2___ITALIAN SPINACH PIE


Perp: 10 min / Cook: 38 min





Eat plenty of spinach to help keep your heart in tip-top shape with vitamins A and C and folate.





1 tbsp olive oil


2 medium leeks, white part only, halved lengthwise, thinly sliced, and rinsed


1 box (10 ounces) chopped spinach, thawed and squeezed dry


1 cup cooked long-grain white rice


3 large eggs


1 cup grated Parmesan cheese


1/2 tsp dried marjoram, crumbled


1/2 tsp salt


1/4 tsp black pepper





1. In medium nonstick skillet over medium heat, heat oil. Add leeks. Saute until softened, about 8 minutes. Set aside.


2. Preheat oven to 375 deg F. Lightly coat 9-inch glass pie plate with nonstick cooking spray.


3. In medium bowl, combine leeks, spinach, rice, eggs, 3/4 cup Parmesan, marjoram, salt, and pepper. Spoon into prepared plate and smooth top. Sprinkle with remaining 1/4 cup Parmesan.


4. Bake until firm and browned, about 30 minutes. Serve warm or at room temperature, cut into wedges.

Old-Fashioned Secret-Ingredient Chocolate Cake-low in CALORIES....


Prep: 20 min / Cook: 30 min





3/4 cup tomato juice


1/4 cup water


2/3 cup unsweetened cocoa powder


21/4 cups all-purpose flour


1 tsp baking soda


1/2 tsp baking powder


1/4 tsp salt


11/2 cups sugar


1/2 cup vegetable oil


3 large eggs


11/2 tsp vanilla extract





For Icing


1 ounce unsweetened chocolate


2 tbsp low-fat (1%) milk


1 tbsp unsweetened cocoa powder


4 ounces 1/3-less-fat cream cheese


21/2 cups confectioners'sugar, sifted


1/2 cup seedless raspberry jam





1. Preheat oven to 350 deg F. Coat two 9-inch-round cake pans with nonstick cooking spray.


2. In small saucepan, bring tomato juice and water to a boil. Whisk in cocoa powder until smooth. Remove from heat.


3. In medium bowl, stir together flour, baking soda, baking powder, and salt.


4. In large bowl, beat together sugar, oil, eggs, and 1 tsp vanilla extract until combined. Beat in cocoa mixture. Beat in flour mixture just until evenly moistened. Divide batter between prepared pans.


5. Bake until toothpick inserted in centers of cakes come out clean, 25 to 30 minutes. Transfer pans to wire rack. Let cool 10 minutes. Turn cakes out onto rack. Let cool completely.


6. Prepare icing: In medium microwave-saft bowl, microwave together chocolate and milk on high powder 1 minute. Stir until smooth. Whisk in cocoa powder until smooth. Whisk in cream cheese and 1/2 tsp vanilla extract. Stir in confectioners'sugar until combined.


7. Place one cake layer on flat plate or platter. Spread top of this layer with jam. Place remaining layer over layer with jam on it. Spread icing over side and top of cake.

this is a great cookbook that centers on fat content......so depending on what type of diet your dad is on, you can adjust the ingrediants.....


in this cookbook are lots of ';normal'; dishes that have been


re done to take out the fat.......even a choc. fudge pudding cake

Try sabudana khichdi or poha that is beaten rice cooked with cauliflower peas capsicum carrot boiled potato.
Have lots of fruit on hand for snacking. One of my favorite snacks is fruit and mixed nuts. Yogurt is also a good, health snack. A low calorie dessert for the chocoholic:





1 cup flour


3/4 cup granulated sugar


6 tablespoons unsweetened cocoa powder


2 teaspoons baking powder


1/2 teaspoon salt


1/2 cup skim milk


2 1-ounce squares unsweetened chocolate


2 tablespoons butter


1 cup light brown sugar, packed


1 cup hot water





Preheat oven to 350 degrees F. Lightly coat a 10-inch pie pan with nonstick cooking spray.





Mix together flour, sugar, 2 tablespoons of cocoa powder, baking powder and salt in a large bowl. Set aside.





Combine milk, chocolate squares and butter in a small saucepan. Heat on low until chocolate and butter are melted. Blend well into flour mixture. Transfer batter into prepared pie pan, spreading evenly across bottom.





In a small bowl, mix together brown sugar and 4 tablespoons of cocoa powder. Sprinkle evenly over batter. Place pie in oven and gently pour hot water over everything (this will create a brownie-like top and a gooey bottom). Bake for 40 minutes; center will be pudding-like.





Remove pudding pie from oven and let cool slightly. Top each serving with a scoop of frozen yogurt.

My dad is the same way. Read all labels and make sure whatever he eats has no trans fat, partially hydrogenated oils. no more than 4gr. of fat and sugar.





Have a lot of fruits on hand for him to pick on during the day. Raw veggies are very healthy and almonds.





Raw 100% whole grain oats, nuts, and raisins can be sprinkled onto sugar free ice-cream, or light yogurt.





A kid's favorite is peanut butter (ALL NATURAL) and raisins on celery. Also, light cream cheese spread on celery is good. I like apples with peanut butter or almond butter.(ALL NATURAL)


Honey is also good on apples.

Believe it or not, chocolate pudding isn't too bad of a treat for someone dieting plus it helps take care of the occasional chocolate craving. Check the label on pre-made pudding, particularly the kind in the cold dairy section. Or make your own and use skim milk. You can add other stuff to it like bananas or even a little Cool Whip.

Also, get him some flavored rice cakes, like caramel, cinnamon, etc--they are REALLY good. And he can eat a bunch of them. And get him some fresh fruit, like pink lady apples, asian pears, Minneola oranges, pinapple chunks, kiwi, strawberries, and mango--and get him some chocolate yogurt dip for it. Peaches topped with cool whip. Nutri-grain frozen waffles topped with berries and cool whip. Also, baby carrots with low fat ranch. Crunchy granola bars. Healthy cereals with skim milk. Tuna fish sandwiches. Popcorn or kettle corn. Lean cuisine type meals. And if he wants something else sweet, a slice of toast with a bit of jam is not that many calories.
Grind some skinned, unsalted, roasted peanuts in a food processor with some sugar %26amp; cocoa powder..... keep processing untill the oil comes out...forming a fudge like consistency....its healthy awwrite....
Fresh fruit is always healthy, apples, raisins, oranges, melons, dried Cranberries, dates, apricots, dried prunes, bananas, etc. Raw carrots are good too. Also full of fibre and vitamins.
Fruit salad w chocolate(just a little) whipped cream when it's warm oh it's so good. Substitute all the ingredients in cookies including the chips, if you can make a more healthier chocolate.


All sweets you can substitute , bleached flour/ wheat flour, 2% milk fat free but leave a little something in there. He won't notice, oh you can go to food network.com they had a whole week of healthy foods.
Go with some youghurt-covered raisins for snacks, but for a sort of lunch, marinate some steak in low-fat italian dressing, and serve it with garlic-buttered green beans.





Green Bean Recipe:


1 lb. fresh green beans.


6 tbs. butter/margarine


1 tsp. garlic powder


2 tbs. onion powder.





Boil green beans. Strain. Add all other ingreedients. Toss. Serve.
