i love to make a mini sub with lots of homemade pesto sauce (olive oil, basil, salt, pepper, garlic) sliced tomatoes, fresh sliced mozzarella and fresh basil leaves. it's vegeterian, and perfect for picnics and nice summer days. (if you want some protein in there you can add salami or proscuitto to go with the italian feel and give it a great flavor.

pita chips with hummus http://www.recipezaar.com/8649

or tabouleh salad http://www.recipezaar.com/266804

(both of which you can now find at your local grocery store so you don't really have to make them, i just added the recipes so you could see the ingredients etc)

I'm not sure if you're a picky eater since you said nothing nasty and gross, so that might be a little exotic for you.

how about, toast with peanut butter, bannanas and powdered sugar? the only thing about this one is that it's not very calorie friendly compared to the basil mozzerela tomato sub.

since you said you like apples, look at this recipe http://www.recipezaar.com/250871

i think it looks great !

if you like simple things mac and cheese, grilled ham and cheese sandwhich, chicken tenders, mexican style quesadillas etc. best of luck to you. happy eating.
Sandwiches are fantastic in that they are so simple and quick to make and at the same time can be a very healthy option. Here is one of my favourite ideas and a link to the site it comes from for lots more...

This simple creation has to rate as one of my all time favourite sandwich ideas. Its clean, fresh, creamy flavour is a joy to experience.

Per person, you will require:

1 freshly baked baguette

4 rashers of lean bacon

4/5 slices of fresh buffalo mozzarella

1 tbsp roughly chopped coriander (known as cilantro in US)

Grill the bacon under a hot grill until cooked. Slice the baguette in half horizontally and arrange the rashers on the bottom half. Lay the cheese slices on top and sprinkle on the coriander. Cover with the second piece of bread, press down lightly, then slice and serve.
Ever try a grilled peanut butter sandwich with bananas. It is really good.

Grilled bacon and cheddar cheese on whole wheat bread.

Grilled chicken breast on a toasted cibatta roll with mayo, lettuce, tomato, grilled red onions, provolone.
Peanut butter and banana w/or w/o toast/
