Any snack recipes that are for kids at a preschool that are nutritional and are low in sugars?

Roasted Pumpkin Seeds


1 1/2 cups pumpkin seeds


2 tbsp melted butter or olive oil or vegetable oil


Suggested seasonings: salt, garlic salt, pepper, cayenne, seasoning salt, cajun seasoning


Toss pumpkin seeds in butter or oil with seasoning of your choice. Spread pumpkin seeds into a single layer on baking sheet and bake at 300 degrees for 45 minutes, stirring occasionally until golden brown.





*Crackers with peanut butter, cheese, lean meat, apple butter, apple slices, banana slices, chocolate chips, etc.


*Trail mix with dried fruit, goldfish crackers, pretzel twists, cheerios (plain, honey nut, or apple cinnamon work well), peanuts (but beware of potential peanut allergies), etc.


*Mini pizzas using whole grain crackers or mini whole wheat bagel halves and pizza sauce and reduced fat cheese.


*Spread a mixture of light cream cheese and craisins onto apple wedges and sprinkle with cinnamon or nutmeg.





Aquarium Jello Cups


3/4 cup boiling water


1 (3 oz) package berry blue gelatin mix


1/2 cup cold water


ice cubes


gummy worms or fish


Stir boiling water into gelatin mix at least two minutes until gelatin dissolves. Add enough ice cubes to cold water to equal 1 1/4 cups. Add cold water and ice to gelatin and stir until slightly thickened. Remove any remaining ice. (Refrigerate a little bit if it still seems thin) Pour gelatin into clear plastic cups and suspend gummy worms or fish in gelatin. Refrigerate one hour or until firm.





Peanut Butter Yogurt Dip


1 1/2 cups vanilla yogurt or plain yogurt


2 tablespoons peanut butter


1 tablespoon dark brown sugar


Puree in food processor until blended. Chill in fridge for 20 minutes to thicken slightly. Dip apple wedges, strawberries, pineapples, grapes, pretzels, etc.


*Make fruit kabobs on popsicle sticks to dip*

Finger jello. Use sugar- free jello for a really low sugar low cal version.
Baked Sweet Potato Fries


4 sweet potatoes (yams)


1/4 cup olive oil


Salt to taste


Preheat oven to 400 degrees. Cut sweet potatoes into 1/2-inch thick lengthwise strips and


toss with olive oil. Coat a baking sheet with nonstick cooking spray and arrange potatoes on


baking sheets. Bake potatoes for 15-20 minutes or until golden brown on bottom. Turn


potatoes over and bake about 15-20 minutes or until golden brown all over. Sprinkle with salt


and serve. Makes 4-6 servings.








Yummy Zucchini Muffins


1陆 cups shredded zucchini (about 2 small)


2 cups whole-grain pancake or biscuit mix


1 teaspoon cinnamon


1 teaspoon allspice


2 eggs


戮 cup brown sugar


录 cup unsweetened applesauce


2 teaspoon fresh lemon juice


powdered sugar (enough to dust the muffins)


Wash zucchini and remove ends.


Shred zucchini using largest holes on grater.


Place grated zucchini on paper towels and squeeze to remove water.


Measure 1陆 cups of squeezed-dry zucchini.


Preheat oven to 375掳 Fahrenheit.


Line a 12-cup muffin tin with paper liners.


In a large bowl, mix whole-grain pancake mix (or biscuit mix) with spices.


In a separate bowl, whisk together eggs, brown sugar, applesauce, and lemon juice.


Fold the egg-sugar mixture and shredded zucchini into the pancake-spice mixture; do not overmix.


Fill each muffin cup 2/3 full with batter.


Bake 10鈥?5 minutes or until golden.


Remove muffins from tin and cool on a wire rack.


Sprinkle muffins with a dusting of powdered sugar.





Berry Muffins


1/3 c. all-purpose flour


1 c. rolled oats


1/4 c. brown sugar


1 tbsp. baking powder


1/2 tsp. cinnamon


1 c. skim milk


1 egg, beaten


3 tbsp. vegetable oil


1 1/4 c. blueberries


3/4 c. raspberries





Directions:





Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius).


Spray muffin cups with non-stick cooking spray.


Combine flour, oats, brown sugar, baking powder, and cinnamon in a mixing bowl.


Fold in berries.


Spoon the mixture into the muffin cups, approximately 2/3 full.


Bake for 25 to 30 minutes or until light golden brown.
Fruit Salad or cabobs


Veggie Ranch Dip Bowl

Make pinwheel snacks with tortillas.





Smear the flour tortilla with peanut butter and low sugar jam. Roll and cut into easy to pick-up pieces.





Mix cream cheese and low sugar jam. Spread this on the tortilla. Roll and cut into pieces. You can also add fruit that has been cut into thin pieces.
