Healthy snack or dessert recipes with no wheat or sugar?

I'm looking for simple recipes for cookies, cakes, muffins, etc. I need recipes that have no wheat flour, no white sugar, no brown sugar, and no artificial sweetners. I'm only using maple syrup, honey, or molasses as sweeteners. I would prefer some easy homemade recipes using ingredients like flax, oats, brown rice flour, etc.Healthy snack or dessert recipes with no wheat or sugar?
You can take any normal recipes and replace the flour with rice or oat or potato flour, the eggs with a cornstarch mixture (1 tbsp of cornstarch mixed into 3 tbsp of cold water) and the sugars with your own sweetener. For denser flours, add more baking powder or baking soda to get them to rise. You may have to tweak the recipe a few times to get it the way you like it, but don't be afraid to experiment. Baking with natural sweeteners is fun, easy, and tastes good! It is easy to convert any recipe, just reduce the amount of sweetener to 1/2, and use it to replace the same amount of another liquid.


(For example, if your recipe calls for 1C sugar and 1C milk, use 1/2 cup honey/maple/whatever and 1/2C milk.)


As for the no-wheat, have you tried spelt? Many people who cant tolerate wheat can handle spelt, it has a different sort of gluten and can be used like wheat in any recipe.

I don't have any recipes for cookies, cakes or muffins because it's easy to convert from white sugar and flour to honey and say oat flour, but I have a great recipe for fudge.





Carob Fudge Brownie


Makes 12 pieces


Keeps in fridge for 5 days


1 1/4 c pitted dates


3/4 c soaked raisins


4 tbsp carob powder


2 c Brazil nuts, presoaked overnight in cold water


2 c water


2/3 c ground flax seeds


2/3 c sunflower seeds


1/2 c chopped walnuts


1/2 c whole walnuts


sprinkle of sesame seeds





1. Place the dates, raisins, carbow powder, Brazil nuts and 2 cups water in a food processor and blend until you have a smooth paste.


2. Mix through the seeds and walnuts.


3. Spread the mixture evenly on to a 8 x 8 or 9 x 9 baking dish lined with cling wrap.


4. Sprinkle with sesame seeds and freeze for 1 hour


cut into 12 pieces
